About Us

Scarlett House Food Group Inc. is a leading provider of airline catering services, producing high-quality meals for commercial airline clients. We are seeking an experienced Airline Catering Chef to lead food production activities in a fast-paced, high-volume production environment while ensuring compliance with airline specifications, food safety standards, and operational requirements.

Duties:

· Plan, organize, and oversee meal production in accordance with airline menu specifications, dietary guidelines, and contractual requirements

· Prepare and cook complete meals or specialty foods in large volumes for airline catering operations, ensuring consistency in quality, taste, and presentation

· Supervise, coordinate, and schedule the activities of cooks and kitchen helpers involved in food preparation and assembly

· Ensure that all food items are prepared according to standardized recipes, portion sizes, and presentation requirements established by the company and airline clients

· Participate in menu planning and contribute to the development or modification of menus based on operational needs, seasonal availability, and client preferences

· Ensure the accurate preparation of specialized meals, including halal, vegetarian, vegan, allergen-sensitive, and medically required dietary options

· Monitor food preparation processes and conduct quality checks to ensure compliance with company standards and airline specifications

· Maintain strict adherence to food safety regulations, including HACCP principles, sanitation standards, traceability, and proper food handling procedures

· Conduct regular inspections of kitchen operations, equipment, and work areas to ensure compliance with occupational health and safety requirements

· Estimate food requirements, manage ingredient usage, and assist with inventory control, stock rotation, and ordering of supplies

· Work collaboratively with procurement and production teams to ensure adequate supply levels and minimize waste

· Train, mentor, and provide ongoing guidance to kitchen staff on culinary techniques, food safety practices, and production efficiency

· Assist in evaluating staff performance and supporting continuous improvement in kitchen operations

· Ensure kitchen operations meet strict production timelines aligned with airline departure schedules and logistical requirements

· Identify opportunities to improve processes, reduce food waste, and increase operational efficiency without compromising product quality

· Maintain accurate documentation related to food production, safety logs, and inventory tracking as required

· Assist with other catering operations as required, including participation in offsite catering events, food preparation, execution, and coordination to support business needs outside of airline production

· Provide leadership to kitchen staff through coaching, training, and performance management, including progressive discipline in accordance with company policies

· Support ongoing continuous improvement of products, recipes, methods, and formulations in collaboration with product development teams

· Occasionally assist with and facilitate plant trials, product testing, and product development initiatives, including participation in presentations as required

Requirements:

· Secondary school diploma required.

· Minimum 3 years of experience as a Chef or in a similar culinary leadership role.

· Experience in high-volume commercial food production, institutional catering, airline catering, food manufacturing, or banquet production.

· Experience supervising and coordinating kitchen staff.

· Completion of a culinary apprenticeship program, chef training program, or equivalent culinary certification is considered an asset.

· Strong knowledge of HACCP, Halal, food safety regulations, sanitation standards, and quality assurance procedures.

· Experience preparing specialized dietary meals and working within strict production specifications.

· Strong organizational, leadership, and time management skills.

· Ability to work effectively in a fast-paced, deadline-driven environment.

· Ability to stand for extended periods and perform physically demanding tasks as required.
