Sous Chef

We are looking for a Sous Chef with minimum 4 years experience to manage high volume daily food production, oversee quality and compliance, and lead a team in a fast-paced environment. The role involves overseeing and handling cooking and storage of all perishable, raw and cooked materials for food production operations, ensuring efficiency, quality, and compliance. Job Description
Reporting to the Executive Sous Chef, the Sous Chef will have primary responsibility to ensure that customer airline’s food is produced to specific schedules, client specifications in accordance with pre-determined weight and to the highest Customer and CLS Catering’s specifications.
Reporting To: Executive Sous Chef
Compensation: $ 63000 to 70000 Annually
Schedule: Monday to Sunday shift work, 40 hours per week.
Job Duties
Key responsibilities include (and not limited to) the following:
- Ensure efficient production of all food items to provide for proper quantities on a timely basis, keeping with the Master Product Schedule.
- Strict adherence to customer and CLS Catering Services specifications and procedures.
- Responsible for all handling, cooking and storage of all perishable, raw and cooked materials at all times, in keeping with HAACP and FSI standards.
- Ensure proper documentation is maintained such as CCP records according to HACCP
policy.
- Ensure CLS Catering Services’ and customers’ quality standards are met on all items
produced.
- Requisitions and Reservations
- Liaises with Requisition stores to ensure receipt of food and raw products comply to pre- determined standards and specifications.
- Fair and consistent enforcement of all posted rules and regulations.
- Adherence and strict enforcement of all Federal, Provincial and Municipal Health and
- Safety Standards and Regulations.
- Scheduling, sufficient staffing based on production and productivity.
- Ensure that equipment and machinery required for production is maintained and services
to pre-determined standards set by management.
- Other duties and projects as assigned
Skills and Abilities Required
- Professional Culinary accreditation (i.e. Red Seal, CAP) Diploma form a Culinary Program
- Minimum 4 years’ experience in high volume environment required (Catering Company,
Hotels)
- Minimum 2 years’ experience as Lead/ Sous Chef in a large kitchen Experience in union environment preferred.
- Possess a basic understanding of production machinery an asset.
- Proficient with Microsoft (Word, Excel, PowerPoint, Outlook)
- Proven experience and understanding of various cooking methods, ingredients,
equipment and procedures
- Superior communication skills both written and verbal
- Must be available to work shift work, weekends and statutory holidays Ability to lead effectively with a wide range and diverse community
Working Conditions/ Physical Requirements
- Ability to provide guidance to front line and supervisory staff.

- Manual dexterity required to use desktop computer and peripherals.
