Cook - PERMANENT FULL TIME
JOB SUMMARY:
The Cook I adds to the quality of life of people who live at Mount St. Mary Hospital by preparing assigned food items that are nutritious, therapeutic and palatable. As required, is in charge of a designated shift within the Food Services department, overseeing the operation and supervising staff.
JOB DUTIES AND RESPONSIBILITIES
1. Prepares food and therapeutic items by following established menus, recipes and quantity quotas, determining ingredients and quantities required and assembling ingredients and equipment required for cooking.
2. Plans preparation of food and cooking schedule to ensure timely food production, minimizing the time between completion of cooking and serving, and maximizing the freshness/quality of the food.
3. Prepares food and therapeutic diet items by using a variety of cooking methods/procedures. Tests food items for palatability and temperature, making adjustments as needed. Controls portioning of food items so that recipe yield meets assigned quantity quotas.
4. Maintains established food rotations in storage in order to minimize spoilage and waste.
5. Unpacks incoming food items and/or other kitchen-related items; checks that the supplies delivered match the packing slip; identifies and records any discrepancies; sorts and places items in appropriate area.
6. Provides bulk food items to House kitchens; works in House kitchens as required.
7. Cleans and sanitizes the work area / kitchen equipment in accordance with safety and sanitation practices and procedures.
8. Completes food service audits in Main Kitchen according to the schedule; reports findings outside of acceptable / normal limits.
9. As required, oversees the operation of the Food Services Department on a designated shift; supervises food services staff by providing daily work direction to staff, scheduling and coordinating work assignments, and identifying / providing orientation; calls in relief staff to fill short notice vacancies following established guidelines.
10. Participates in reviewing and updating Food Service standards and procedures in accordance with Hospital Policies and Food Premises regulations and HACCP legislation.
11. Maintains a safe, secure environment for residents and staff by immediately reporting unsafe hazardous conditions and suspected resident abuse. Takes immediate action, as appropriate, to reduce/eliminate recognized safety risks and documents the incident/unusual occurrence following established procedures.
12. Performs other related duties as assigned.
QUALIFICATIONS
Education, Training and Experience
- Graduation from a recognized 12 month program in cooking or an equivalent combination of education, training and experience plus two (2) years recent related food service experience.
- Completion of Food Safe Level 1
