The Distillery Restaurants Corp., creators of Cluny Bistro, El Catrin, Pure Spirits Oyster House & Grill, Madrina Bar y Tapas, Distillery Events and Distillery Festivals are seeking an experienced and motivated Senior Restaurant Pastry Cook who loves desserts, takes pride in their craft and wants to contribute to a high-achieving and delicious French restaurant. The ideal candidate not only understands that exceptional food is at the heart of hospitality but that they are an ambassador to Toronto's unique food and beverage culture.

What you must already know how to do:-
Following recipes, portion controls and presentation specifications as set out by our Executive Chef.

Preparing many sweet treats! For example, crème anglaise, ice creams, sorbets, crème brûlée, croquembouche, cookies, petits fours.

Portioning nougatine, sponge cakes and glaze cakes.

On the savoury side, making flat breads, lavash and saltines.

Maintaining a clean and organized station, equipment and utensils, while strictly adhering to sanitation, food safety, and hygiene guidelines.

Following FIFO (first in, first out) method to maximize freshness of ingredients.

Moving food products and supplies between outlets.

Reporting any equipment/utensil malfunctions/deficiencies to Chef on duty.

Working largely unsupervised, and independently.

Other duties as assigned.
What you’ll bring to the kitchen:-
EXPERIENCE. You have at least five (5) years of professional pastry experience. You have done all of the things listed above at some point, and you are confident that you can produce these items to a high standard.

EDUCATION/TRAINING. You’ve graduated with a Pastry program degree/diploma/certificate.

DRIVE. You have a strong internal drive and happily work independently to meet deadlines without a lot of supervision. You're happy working with chefs, however, you can easily manage your own work.

ADAPTABILITY. You thrive in a fast-paced, everchanging environment (and a weekend schedule).

PERSONALITY. You’re humble coupled with a good sense of humour and would list 'communication' as one of your strengths.
