Job Description
Sushi On Bay is looking for a reliable and experienced Sushi & Maki Chef to join our team. We are a busy sushi restaurant located near Bay & Bloor, serving sushi, sashimi, maki rolls, bento, donburi, party trays, and daily Grab & Go items.
The ideal candidate should be able to prepare sushi and maki rolls efficiently while maintaining consistent food quality, presentation, cleanliness, and food safety standards. We are looking for someone who can work well in a team, handle busy lunch and dinner periods, and take responsibility for their station.
Main Duties and Responsibilities
- Prepare sushi, sashimi, maki rolls, hand rolls, donburi, bento items, and party trays according to restaurant standards.
- Prepare daily Grab & Go sushi items with consistent quality and presentation.
- Cut and prepare fish, seafood, vegetables, and other ingredients safely and properly.
- Cook and season sushi rice according to restaurant standards.
- Set up and maintain the sushi bar before, during, and after service.
- Ensure all food is prepared fresh, clean, and properly portioned.
- Maintain consistency in taste, size, presentation, and overall quality.
- Follow proper food safety, sanitation, and allergy procedures.
- Keep the sushi bar, prep area, fridge, cutting boards, knives, and equipment clean and organized.
- Check ingredient freshness and report low stock or quality issues to management.
- Assist with inventory, prep lists, and restocking when needed.
- Work efficiently during busy periods while maintaining quality.
- Communicate clearly with kitchen staff, servers, and management.
- Follow restaurant recipes, procedures, and portion standards.
- Help with opening and closing duties related to the sushi station.
Requirements
- Previous sushi and maki experience is preferred.
- Ability to make sushi rolls quickly and consistently.
- Basic knife skills and food preparation knowledge.
- Knowledge of food safety and cleanliness standards.
- Ability to work in a fast-paced restaurant environment.
- Reliable, punctual, and responsible.
- Positive attitude and willingness to work as part of a team.
- Ability to follow instructions and maintain restaurant standards.
- Food Handler Certificate is an asset.

Experience

- Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
