Dining Room Server Job Description

Purpose of this position:
To ensure the comfort of guests in the dining area and to ensure that food service is delivered efficiently, effectively and with a professional demeanor from the kitchen to the guests within the standards of service of a four-diamond resort.
Key Objective # 1 – To provide a high quality of service to the guests and rate Excellent on guest surveys
Ø Greeting – smile, introduce yourself and bring the water carafe and bread basket. Advise the guest of the specials
Ø Pre-Order – take the drink order and when returning to the table with the drinks take the food order
Ø Taking the Order – acknowledge the order by repeating it, ask and note allergies and circle them in red, remove the menus and place the order in the kitchen and call it
Ø During Service – at dinner time, bring the amuse before the appetizers, let the kitchen know when you are ready for your next course. After clearing plates from the table, make sure the table is ready for each course with the appropriate cutlery. Check in frequently to make sure that the guests have water and bread at all times
Ø place and remove all beverages from the right of the guest where the nature of the table allows you
Ø serve women and elderly guests first, followed by the person to the right of the host, serving the host last where relevant
Ø place and remove all food from the left side of the guest if the nature of the table allows you. If appropriate, the protein should be paced closest to the guest
Ø when delivering the food always offer freshly ground pepper. Go back to the table and ask how they are enjoying their meal. If there is a problem offer a fresh serving of food and let the supervisor know. If necessary keep your table apprised of what is going on with the food
Ø Desserts – before offering desserts, clear the table of all dirty dishes, side plates and bread basket. Offer coffee and/or tea with the desserts
Ø Farewell – express an appropriate farewell as the guest leaves – good evening, good day, or enjoy your morning
Ø After – clear and reset the table
