About Us
The Granite Room Restaurant, located inside the Discovery Hotel in downtown Iqaluit, is a full-service restaurant offering elevated casual dining. Our culinary program serves hotel guests, local residents, and large group events, with a focus on quality ingredients, consistency, and strong kitchen leadership.
We are seeking an experienced Head Chef to lead our culinary operations. This role requires a hands-on leader who can manage kitchen staff, maintain high food standards, and oversee all aspects of restaurant kitchen operations in a fast-paced hospitality environment.
Key Responsibilities
- Lead and supervise all kitchen operations for the restaurant, bar, and group dining services
- Recruit, train, schedule, and manage kitchen staff to maintain an efficient and professional team
- Develop menus, daily features, and seasonal offerings while maintaining consistent quality and presentation
- Manage food ordering, supplier relationships, and inventory levels
- Monitor food cost, portion control, and waste management to meet budget targets
- Ensure all dishes are prepared according to established recipes and quality standards
- Maintain strict adherence to food safety, sanitation, and workplace safety regulations
- Conduct regular quality control checks to ensure consistency in taste, presentation, and service speed
- Coordinate kitchen operations during busy service periods and large group bookings
- Identify opportunities to improve menu offerings, kitchen efficiency, and overall guest experience
Qualifications
- Proven experience as a Head Chef, Executive Chef, or Senior Sous Chef in a restaurant or hotel environment
- Strong leadership and team management skills
- Experience with menu development, food costing, and kitchen inventory systems
- Solid knowledge of food safety and sanitation standards
- Ability to work in a high-volume kitchen environment
- Strong organizational and problem-solving skills
- Culinary training or Red Seal certification considered an asset
