Job Summary
We are seeking a Specialist Chef with master-level expertise in the ancient art of Siu Mei (Chinese Roasting). This is a technical role responsible for the entire lifecycle of traditional Chinese BBQ production, from complex marination chemistry to high-heat oven management.

Key Responsibilities
- Select specific cuts of pork, poultry, and duck to ensure proper fat-to-lean ratios for premium roasting.
- Develop and apply proprietary spice blends and complex marination techniques.
- Direct the expert preparation, curing, and roasting of authentic Siu Mei, including Crispy Roast Pork (Siu Yuk), Honey-Glazed Char Siu, BBQ Duck, and Soya Sauce Chicken.
- Manage specialized roasting ovens, precisely adjusting heat and humidity to ensure the signature "glassy" skin finish.
- Perform routine checks and basic maintenance on specialized BBQ ovens to ensure safety and longevity.
- Actively supervise and provide hands-on technical training for new kitchen staff, focusing on safety and authentic techniques.
- Maintain inventory records and estimate food requirements for specialized BBQ meats.
- Manage heavy lifting of raw meat products and maintain high-volume output in a fast-paced kitchen.
Key Requirements:
- 1 to 2 years of dedicated and specialized experience in traditional Chinese BBQ (Siu Mei) preparation and roasting.
- Completion of secondary school is required.
- A combination of culinary education, training, and experience will also be considered.
- Valid Ontario Food Handler Certificate.
- Must be available for late-night, weekend, and holiday shifts.
Physical & Environmental Requirements
- Comfortably perform precision work in a high-temperature environment near industrial roasting equipment.
- Expert-level knife skills for bone-in meat chopping and specialized skewering.
- Ability to handle heavy lifting (up to 50 lbs.) and remain standing for the duration of an 8-hour shift.
Pay: $36.00 per hour
