Job description
The general duties of the dishwasher are to support the BOH and FOH team by working efficiently to ensure woks and all dishes are cleaned promptly. The dishwasher also provides support through maintaining a clean BOH area.
Primary Objectives
- Washing Woks
- Dishwashing
- Clearing bus bins
- Cleaning & recycling
- Assist both line cooks and FOH as needed
Specific Areas of Responsibility
Washing Woks
- Washing woks effectively during a busy service is one of the key duties of this role
- Speed and efficiency are key. We have a specific way in which our woks are washed, each wok taking 20-30 seconds to wash
Dishwashing
- Efficiently washing kitchen equipment is the other key duty of this role
- Most dishwashing will consist of kitchen equipment, inserts and utensils
- Familiarizing yourself operation of dishwashing machine and how to ensure cleanliness of all items going through
Cleaning
- Maintaining cleanliness of dish area at all times, clean as you go, don’t leave a dirty station behind you
- Sweep and mop floors around sink
- Have dirty dishes washed and put away
- Wipe down sink and clean dishwasher filters
- Break down cardboard boxes and recycling
- Take out garbage and replace bags if needed
- When closing check that dish area is clean, tidy and ready for next shift
Organization
- Ensure all dish area supplies/equipment are organized
- Refresh sanitizer every 2-3 hours/at least each shift change
