Lucky Supermarket is a growing Asian and multicultural grocery retailer with multiple locations across Edmonton, Calgary, Winnipeg, and Surrey. As we continue to expand, we are seeking an experienced and creative Bakery Innovation & Operations Manager to lead the development, implementation, and standardization of our bakery programs across all locations.
This position is ideal for someone who is passionate about bakery innovation, operational excellence, staff development, and creating products that resonate with our diverse customer base.
Position Summary
The Bakery Innovation & Operations Manager is responsible for developing new bakery products, standardizing recipes and production processes, training bakery teams, and ensuring consistent execution across all store locations. This role works closely with store management and bakery teams to drive sales growth, improve operational efficiency, and maintain exceptional product quality.
The successful candidate must be highly hands-on and willing to travel between multiple Edmonton locations and future locations in Calgary and Winnipeg to support bakery implementation, training, and operational excellence.
Key Responsibilities
Bakery Innovation & Product Development
- Research and develop new bakery products, seasonal offerings, and limited-time promotions
- Create and test recipes suitable for large-scale grocery bakery production
- Identify industry trends and customer preferences
- Develop innovative Asian and Western bakery products
- Source ingredients, packaging, and equipment to support new product development
- Conduct product tastings and pilot programs
Operations & Standardization
- Develop and implement standardized recipes, production procedures, and quality standards
- Ensure consistency in product quality, presentation, taste, and portioning across all stores
- Create bakery production manuals and standard operating procedures
- Monitor food costs, labour efficiency, waste control, and profitability
- Support new bakery department openings and future expansion projects
- Establish bakery merchandising and display standards
Training & Team Development
- Train bakery managers, supervisors, and bakery staff on recipes, production methods, food safety, and operational procedures
- Travel regularly between multiple Edmonton store locations to ensure proper implementation of bakery programs
- Conduct hands-on coaching and ongoing retraining as needed
- Develop training materials and operational guides
- Assist in recruiting, onboarding, and evaluating bakery team members
- Build bakery knowledge and technical skills throughout the organization
Quality Assurance & Food Safety
- Maintain company standards for freshness, quality, cleanliness, and food safety
- Conduct bakery audits and store inspections
- Ensure compliance with all applicable food safety regulations
- Investigate and resolve quality concerns and operational issues
Sales & Merchandising
- Develop promotional bakery programs and seasonal product launches
- Partner with marketing on flyers, social media campaigns, and in-store promotions
- Analyze sales data and identify opportunities for growth
- Improve bakery department profitability through product mix optimization and operational efficiencies
Vendor & Supply Chain Management
- Work with suppliers to source ingredients, packaging, and bakery products
- Evaluate vendor performance and pricing
- Support inventory planning and purchasing strategies
- Coordinate product rollouts and distribution across all locations
Qualifications
- Minimum 3–5 years of bakery production, bakery management, or bakery operations experience
- Multi-unit or grocery retail bakery experience preferred
- Asian bakery experience strongly preferred
- Experience developing new bakery products and recipes
- Strong understanding of large-scale bakery production and food safety
- Proven ability to train and develop teams
- Excellent leadership, communication, and organizational skills
- Ability to manage multiple projects simultaneously
- Strong analytical and problem-solving skills
- Ability to work independently and as part of a team
Travel Requirements
- Must be willing to travel regularly between multiple Edmonton store locations
- Must be willing to spend extended periods at individual stores during new product rollouts and implementation phases
- Ability to travel periodically to Calgary, Winnipeg, and future store locations as required
