Cafe Nervosa opened its doors at the corner of Yorkville and Bellair in 1996. Later renamed Trattoria Nervosa, this little yellow house continues to thrive as a neighbourhood meeting place, attracting both familiar and new faces every day. Our team at Trattoria Nervosa puts as much care and consideration into our food and drink as we do into creating memorable experiences for our customers. Our customers are our extended family. And like family, we invite our guests to sit at our table and enjoy home-cooked Southern Italian food prepared with pride and love.
The Role
- Promotes Guest Satisfaction by ensuring all food is executed to standard
- Meets food cost target through maintaining inventory and ordering systems
- Support Executive Chef in Menu development
- Trains all cooks on the proper and consistent execution of all dishes
- Maintaining a spotlessly clean kitchen and back of house
- Adhering to all food handling and health & safety procedures
- Maintenance of equipment and building, scheduling repairs as needed
- Review and evaluate vendor/supplier pricing on regular basis
- Implement plans and corrective actions to address any inventory variances
- Manage labour cost through scheduling and cutting of employees
- Conducting Line Checks and Pre-shift meetings prior to service
- Fostering an atmosphere of hard work, discipline, respectful communication, cooperation and positivity amongst all staff
- Demonstrating high level of self-discipline in work habits, work quality, and the pursuit of new professional knowledge & skills
Who You Are
- We believe that our kitchens are only as good as their leadership team. In the role of Sous Chef, your primary objective is to support the Chef de Cuisine, and lead the kitchen in their absence to the same standards of execution. A Sous Chef must be a creative person with a passion for amazing food, who has strong technical and leadership skills to match.
Preference will be given to candidates with:
- 3 years Senior Cook or 1 year Sous Chef prior experience
- Solid technical culinary foundation
- Strong leadership and communication skills
- Valid Food Handlers Certification
- Valid WHMIS Certification
- Valid First Aid Certification
