We are currently seeking a skilled, passionate, and energetic Chef de Partie to join our high-volume catering production and fulfillment team in Vancouver. What You’ll Do
As a Chef de Partie, you will run a designated kitchen section, ensuring that top-tier meals are prepared, portioned, and staged perfectly for onboard guests. Working as part of a high-volume production team, you will support operations serving up to 120,000 guests annually across multiple routes, including standard, delayed, and emergency service requirements.
Key Responsibilities:
- Culinary Execution: Prepare, cook, and portion premium menu items—including guest breakfast, lunch, dinner, snacks, and crew meals—strictly following standardized recipes and presentation guidelines.
- Station Leadership: Oversee your assigned section (e.g., prep, hot line, or cold larder), managing production timelines and guiding Cooks to ensure consistency and quality.
- Fulfillment & Staging: Accurately portion, package, and organize prepared items to align with order requirements and train load sheets.
- Food Safety Excellence: Maintain strict adherence to Food Safe compliance, sanitation standards, allergen controls, and product labeling/traceability.
- Irregular Operations Support: Pivot quickly to assist with emergency meal kits and irregular service menus during train delays or operational changes.
- Inventory & Waste Control: Assist with receiving and properly storing ingredients (FIFO) while minimizing waste through precise portioning and smart kitchen management.
What We’re Looking For
- Experience: 2–4 years of professional cooking experience, preferably in a high-volume kitchen, hotel, or premium catering environment.
- Strong Cooking Skills: Excellent knife skills, a deep understanding of cooking techniques, and the ability to maintain consistency under pressure.
- Certifications: Valid Food Safe Level 1 certification is required.
- Adaptability & Drive: Exceptional time management skills and a positive, team-oriented attitude.
- Flexible Availability: Because train schedules are dynamic, you must be available to work a flexible roster, which may include early mornings, evenings, weekends, and holiday shifts.
