Reports To: Diner OwnersRole OverviewThe Red Rooster Diner is a busy, family-owned mom-and-pop style diner on Prince Edward Island. We are seeking a reliable, passionate Head Cook to lead our small kitchen team. You will oversee daily kitchen operations, prepare classic diner comfort foods, and maintain high standards of cleanliness and food safety. This role offers the flexibility of a permanent full-time position or a high-intensity seasonal contract for the peak tourism season.Key Responsibilities
- Food Preparation: Cook classic diner menu items including breakfasts, burgers, seafood, and daily specials.
- Kitchen Leadership: Supervise kitchen staff, schedule shifts, and manage kitchen workflow during peak hours.
- Inventory Control: Monitor food stock, order supplies weekly, and minimize ingredient waste.
- Menu Planning: Collaborate with owners to develop seasonal specials using fresh, local PEI ingredients.
- Quality Control: Ensure every plate meets consistency, temperature, and presentation standards.
- Safety & Sanitation: Maintain strict adherence to PEI health and safety regulations and cleanliness protocols.
- Equipment Care: Oversee the daily cleaning and routine maintenance of all commercial kitchen equipment.
Requirements & Qualifications
- Experience: Minimum 3 years of experience cooking in a fast-paced commercial kitchen or diner environment.
- Leadership: Proven ability to manage, train, and motivate a small kitchen team.
- Speed & Stamina: Ability to work efficiently under pressure during busy breakfast and lunch rushes.
- Physical Ability: Capability to stand for long periods and lift up to 23 kg (50 lbs).
- Certification: Valid food safety certification recognized in Prince Edward Island.
- Availability: Flexible schedule including early mornings, weekends, and holidays.
- Transport: Reliable transportation to ensure punctual arrival for early morning opening shifts.
