Position Summary
We are seeking a skilled Butcher on behalf of a client in the Dartmouth area. This role is responsible for preparing, cutting, trimming, and portioning high-quality meats while maintaining strict food safety and sanitation standards in a restaurant kitchen environment. The ideal candidate has strong knife skills, attention to detail, and experience working with premium beef cuts in a fast-paced kitchen environment.
Key Responsibilities
- Cut, trim, portion, and prepare steaks and other meats according to restaurant specifications.
- Inspect meat quality, freshness, and product consistency.
- Prepare specialty cuts and ensure proper portion control.
- Maintain inventory levels and assist with ordering and receiving meat products.
- Properly label, store, and rotate products.
- Ensure all food safety, sanitation, and health regulations are followed.
- Maintain a clean and organized station.
- Work closely with chefs and kitchen staff to support daily service requirements.
- Minimize waste through efficient cutting and storage practices.
- Sharpen and maintain knives and butcher equipment safely.
Qualifications
- Previous butcher or meat-cutting experience preferred, ideally in a restaurant environment.
- Knowledge of beef cuts, meat preparation techniques, and portioning.
- Strong knife handling and food safety knowledge.
- Ability to work in a fast-paced environment.
- Strong attention to detail and organizational skills.
- Ability to stand for long periods.
