The Morning Leader/Baker is responsible for managing all food inventory in the restaurant. This includes ordering ingredients required for our recipes, and hand making our delicious sweets and desserts. The Morning Leader/Baker is anticipating busy periods to prepare in advance and ensure we are ready to serve our customers. They are committed to maintaining the highest standards of kitchen cleanliness.

Duties in detail:
Daily duties:
- Complete a daily inventory count of sweets, and food prep to ensure stock levels are adequate for the day.
- Complete a daily inventory date check of sweets and food prep to ensure Food Safe standards are being adhered to and discarding any food past its expiry date.
- Follow working list for the day as determined by the Cook
- Bake pies, keeping a good inventory control of the pies in the heated display case to ensure adequate stocks for the time of day. Place the pies in the heated display case using FIFO method. Ensure pies and labels are lined up, neat and tidy.
- Cook mashed potato, mushy peas and gravy, keeping a good inventory control of toppings in the heated wells to ensure adequate stocks for the time of day. Monitor freshness of toppings, controlling temperature gauges when necessary.
- Prepare all of the sweets and desserts by following the recipes carefully and accurately. Ensure that the sweets and desserts look enticing and visually appealing.
- Label and date all food items that are stored in the fridge, freezer, or dry storage areas as per Peaked Pies standards for labelling, for example Trad MAY 26.
- Keep the kitchen and prep areas clean, neat and tidy throughout the day. Wipe down surfaces after use. The prep table should be free from egg wash, crumbs and other food matter when not immediately using those products.
- Ensure all ingredients being used are fresh, properly stored, and handled in accordance to Food Safe regulations.
- Follow proper cooking techniques and Peaked Pies guidelines to maintain a consistent quality and texture of all items.
- Report any noticeable changes to food stock and ingredients relating to quality, size or texture to the Restaurant Manager immediately.
- Multitasking when busy; putting together orders while communicating with other team members of any issues, baking pies, making toppings, addressing out of stock items.
- Bussing the restaurant, especially during busy times to ensure customers always have a place to sit and enjoy their meal
- Constant inventory control of pies and toppings to ensure stocks are adequate for the time of day;
- Baking more pies if necessary, and cooking mashed potato, mushy peas and gravy, or asking the kitchen staff to make if customers needs to be served.
- Mornings includes checking the glass display case, windows and guest dining area to ensure cleanliness is up to Peaked Pies standards
- Mornings includes plating the desserts and checking for quality and freshness
- Washing up dishes throughout the day, keeping the store clean and tidy including outdoor patio area
- Restocking all Front of house items as needed, notifying Supervisor of any items out of stock.
- Ensuring the pie display case is neat, tidy and presentable. Pies should be presented in a neat row with display labels facing the front or removed from view if sold out.
- Ensuring dessert display case is full, neat and tidy.
Customer Service:
- Acknowledge customers when they enter the store; this can be done with a smile or welcoming ‘hello’.
- Initiate the conversation to get to know your customer, if you do not recognise them as a regular your must ask “Have you been in before?”
- Describe our products, along with any specials or meal combos
- Ask for the sale “what can I get you started with?”
- Correctly take the customers order, upsell by asking “would you like that Peaked”, followed by “would you like a drink”
- Make conversation, make a connection, build rapport by asking about their day, finding common ground or offering a compliment
- Use correct Peaked Pies cash handling procedures
- Assemble the order correctly, for here or to-go as per Peaked Pies guidelines.
- If barista trained, must be able to make all drinks on hot beverages menu including latte art
- If serving alcohol, must be able to pour a draft beer

Operational Duties:
- Monitoring cleanliness of the kitchen when arriving at the store. The kitchen and store must be cleaned according to Peaked Pies standards after closing. If these standards are not being met, report insufficiency to the Shift Supervisor or Restaurant Manager for follow up.
- Ensure that there is no food in your fridge that does not belong. Anything not used for Peaked Pies products is to be discarded.
Daily Duties:

- Management Wage: $19.40 per hour plus gratuities
