MEXIKAN is a brand-new Mexican Grill & Cocktail Bar opening in Southwest Edmonton. We are passionate about serving fresh, authentic Mexican food in a vibrant, welcoming atmosphere.
We are looking for an experienced Head Chef / Kitchen Manager to lead our kitchen from day one. This is an exciting opportunity to help build a new restaurant, establish kitchen systems, train staff, and contribute to our long-term success.
Responsibilities
- Lead all kitchen operations and daily food production.
- Prepare authentic Mexican dishes while maintaining consistency and quality.
- Train, supervise, and motivate kitchen staff.
- Create prep schedules and assign daily duties.
- Monitor food quality and presentation.
- Maintain inventory and place food orders.
- Control food costs and reduce waste.
- Ensure compliance with Alberta Health food safety regulations.
- Maintain a clean, organized, and efficient kitchen.
- Work closely with ownership to improve menu offerings and kitchen operations.
- Assist in hiring and training new kitchen employees.
Requirements
- Minimum 3 years of experience as a Head Chef, Sous Chef, or Kitchen Manager.
- Experience preparing authentic Mexican cuisine is required.
- Strong knowledge of tacos, burritos, enchiladas, fajitas, quesadillas, nachos, rice, beans, fresh salsas, guacamole, and Mexican sauces.
- Experience working with commercial kitchen equipment, grills, fryers, and flat-top grills.
- Strong leadership and team management skills.
- Experience with inventory control, food ordering, and food cost management.
- Excellent understanding of food safety and sanitation practices.
- Food Safe Certification (or willingness to obtain before starting).
- Legally eligible to work in Canada.
- Ability to work evenings, weekends, and holidays.
Preferred Qualifications
- Experience opening a new restaurant is considered a strong asset.
- Experience creating recipes and standard operating procedures.
- Knowledge of Mexican beverages and food pairings is an asset.

Schedule
- 8-hour to 10-hour shifts
- Day, evening, and weekend availability required
