The Original Griddle Co. is launching a Smashburger ghost kitchen for Ubereats, skipthedishes and DoorDash and we’re looking for a skilled kitchen lead who can run a tight, fast, consistent line while managing operations inside a compact cooking environment.
This is a new role for a new operation at our compan. It has potential for full time hours but will start off with 35 hours a week to begin, there will be stability, and strong opportunities for advancement as we grow.
What We’re Looking For

- Comfortable working outdoors in all weather inside a heated trailer
- FOODSAFE Level 1 preferred (Level 2 an asset)
- Grill/griddle experience a major bonus
- Experience with propane, generators, and basic equipment troubleshooting is a major bonus as well
What You’ll Do
Kitchen Execution
- Cook high-quality smashburgers and sides at volume with speed and precision
- Run the griddle, fryer, and assembly stations with focus and urgency
- Maintain a clean, efficient workstation at all times
- Follow prep sheets, portioning rules, and recipe standards exactly
- Perform ingredient prep daily (portioning, slicing, labeling, rotating)
- Support a smooth service flow and communicate clearly with crew
- Keep the kitchen organized in a tight trailer footprint
- Hold food safety as a top priority — temperatures, cleanliness, cross-contamination prevention
Food truck Operation
- Prepare stock for next days food truck operation
- Handling slicing equipments to cut potatoes, onions and jalapeños
Leadership & Team Support
- Train and onboard new staff and support scheduling
- Delegate roles during service (griddle, fryer, assembly, front)
- Maintain the culture of quality, speed and discipline
- Ensure brand standards and cleanliness are followed at all times
What You Bring
- Minimum 2 years of line cook experience in a fast-paced kitchen or restaurant
- Experience running the line or acting as a lead cook is ideal
- Confidence with propane systems, generators, and troubleshooting (can be trained)
- Ability to lift 50 lbs (ingredients, equipment)
- Comfort working in heat, steam, noise, and variable weather

Pay: $21.00-$23.00 per hour
