Line Cook
The Fire Truck Grill, Gabriola Island, BC
Position Summary
The Line Cook is responsible for preparing and cooking menu items at The Fire Truck Grill while maintaining high standards of food quality, consistency, and cleanliness.
Working alongside the Chef Manager, the Line Cook plays a key role in daily kitchen operations including food preparation, service execution, and maintaining an organized and efficient food truck kitchen.
This position requires someone who is comfortable working in a fast paced environment, takes pride in their work, and contributes positively to a small team operating in a busy seasonal setting overlooking Silva Bay and the Flat Top Islands.
Employment Term
The Fire Truck Grill operates seasonally.
Operational Season:
May through early September
Service Period:
May 8 through September 12
Shutdown and cleaning duties will continue through approximately September 15 following the final service day.
Schedule
May and June
- Three service days per week: Friday, Saturday and Sunday
- One additional prep shift per week
July through early September
- Four service days per week: Thursday, Friday, Saturday and Sunday
- Order and prep Thursday and Friday mornings
Typical hours range between 35 and 40 hours per week, depending on operational demand.
Hours typically range between 70 and 80 hours per pay period.
Due to the short and intensive nature of the seasonal operation, time off during the operational period is generally not approved except in cases of emergency.
Compensation
- Hourly wage: $20 to $23 per hour depending on experience
- Paid biweekly
- Staff meal allowance each operational day
- Share of the tip pool
Reporting Structure
The Line Cook reports directly to the Chef Manager and works closely with ownership and other team members.
Responsibilities
Working alongside the Chef Manager, the Line Cook supports daily kitchen operations including:
- Preparing and cooking menu items according to Fire Truck Grill recipes and standards
- Assisting with daily food prep and service execution
- Maintaining high standards of food quality and presentation
- Coordinating prep and service flow during operational days
- Assisting with ordering and maintaining organized inventory storage
- Upholding food safety and sanitation standards at all times
- Receiving and organizing deliveries and supplier orders
- Maintaining a clean, organized, and efficient kitchen and truck environment
- Monitoring propane levels and notifying the Chef Manager when refills are required
- Supporting the team during busy service periods to ensure smooth operations
- Representing The Fire Truck Grill brand with professionalism and pride
Qualifications
- Previous kitchen or line cook experience in a restaurant or food service environment
- Ability to work efficiently in a fast paced kitchen environment
- Strong teamwork and communication skills
- Solid organizational habits and attention to detail
- Knowledge of food safety and sanitation practices
- Ability to stay calm and focused during busy service periods
Job Types: Full-time, Fixed term contract, Seasonal
Contract length: 5 months
Pay: $21.00-$24.00 per hour
