Job Duties & Responsibilities:
1. Dough & Ingredient Preparation:
- Prepare, portion, and stretch dough to create consistent pizza bases.
- Ensure proper fermentation and hydration of the dough.
- Select and prepare fresh, high-quality ingredients (sauces, cheeses, meats, vegetables).
2. Operating the Wood-Fired Oven:
- Start, manage, and maintain the wood-fired oven at optimal temperatures.
- Properly arrange wood for even heat distribution and consistent baking.
- Monitor and rotate pizzas to ensure they cook evenly without burning.
- Adjust cooking techniques based on oven heat variations.
3. Pizza Assembly & Cooking:
- Assemble pizzas according to restaurant standards and customer preferences.
- Handle the peel (pizza paddle) skillfully for smooth loading and removal.
- Monitor multiple pizzas at once, ensuring perfect texture and doneness.
- Maintain speed and efficiency during peak hours.
4. Quality Control & Presentation:
- Ensure pizzas have a crispy yet chewy crust with proper charring.
- Confirm toppings are cooked correctly without overloading the dough.
- Slice and plate pizzas with a professional presentation.
5. Cleanliness & Food Safety:
- Keep the work area, tools, and oven clean and organized.
- Follow health and safety regulations, including food storage and sanitation.
- Manage waste reduction and maintain portion control.
