Position Overview
The Meat Cook is responsible for the precise preparation and execution of all steaks and premium proteins. This role demands a deep understanding of temperature control, resting, seasoning, and fire management. The ideal candidate thrives under pressure, values consistency, and treats every cut — from dry-aged striploin to A5 Wagyu — with care and technical accuracy.
This is not a “grill guy” position. This is a craft position.
Key Responsibilities
- Execute all steaks and premium proteins to exact temperature specifications
- Manage pans & broiler with consistency and control
- Understand differences between Canadian Prime, dry-aged beef, Japanese A5, and Australian Wagyu
- Properly temper, season, mark, rest, and plate proteins
- Monitor internal temperatures using touch, thermometers, and timing discipline
- Maintain clean grill grates and organized mise en place throughout service
- Work closely with expeditor to ensure proper pacing and timing
- Assist with butchery and portioning as required
- Maintain strict food safety and sanitation standards
- Contribute to a professional, respectful, and performance-driven kitchen culture
Qualifications
- 2+ years experience cooking steaks in a high-volume or fine-dining environment
- Strong understanding of meat temperatures and carryover cooking
- Ability to work clean and organized under pressure
- Respect for premium product and minimal-waste philosophy
- Strong communication skills and team mentality
- Experience with dry-aged beef and Wagyu is an asset
- Butchery knowledge is an asset
