Join Our Team as a Raw Bar Chef | Nita Lake Lodge Resort & Spa – Whistler, BC
At Nita Lake Lodge Resort & Spa, we’re looking for a Raw Bar Chef who brings technical precision and genuine hospitality to one of the most distinctive dining experiences in the valley.
This role leads our BC oyster program, seafood towers, crudo offerings, and chilled seafood experience within The Lakeside Lounge. We’re looking for someone who knows their product, shucks with confidence, and takes pride in creating a raw bar experience that feels both elevated and approachable.
You’ll work closely with our culinary, bar, and service teams to deliver exceptional quality, presentation, and guest interaction — balancing freshness, knowledge, and a little bit of theatre during service.
What You’ll Be Doing
- Lead and execute the raw bar program including oysters, chilled seafood, crudo, and seafood towers
- Maintain exceptional presentation, quality, and consistency standards across all raw bar offerings
- Manage prep lists, mise en place, and par levels for raw bar operations
- Conduct daily quality checks on oysters, seafood, and raw bar ingredients
- Ensure shellfish tagging, labeling, and traceability standards are maintained
- Collaborate closely with bartenders and service teams during service
- Educate service staff on oyster varieties, flavour profiles, and guest communication
- Maintain strict food safety, cleanliness, and organization standards
- Support inventory management, seafood ordering, and operational efficiency
- Maintain a calm, organized, and detail-oriented approach during high-volume service
What We’re Looking For
- Demonstrated oyster shucking experience required
- Previous experience with raw bar, chilled seafood, or seafood-focused culinary programs
- Sushi or chilled seafood experience considered a strong asset
- Valid FoodSafe certification
- Strong communication and hospitality skills
- Confidence working in a guest-facing, fast-paced environment
- A passion for premium seafood, presentation, and guest experience
