About Henrietta
Henrietta is a new all-day French-leaning bakery, charcuterie counter, wine bar, and retail wine shop opening this fall on Sorauren Ave, with a south-facing patio onto Sorauren Park. We're built by the team behind Henry's Restaurant, Coffee and Wine Shop (Michelin Guide listed, Wine Spectator Best of Award of Excellence) and Brix + Mortar Wine Co., an Ontario importer working with 60+ family-owned wineries. Henrietta brings that same standard of craft to bread, pastry, and charcuterie.
The Role
We're looking for a Head Baker to lead our bakery program from the ground up. You'll run daily production in a dedicated 27x12 ft bakery kitchen with 15 ft ceilings, working on deck ovens with built-in steam. This is a hands-on leadership role: you'll set the standard, train and manage bakery staff, and grow the program as we scale.
What you'll be baking
This role calls for deep, hands-on expertise in sourdough and levain bread baking — natural fermentation, dough development, shaping, scoring, and deck-oven bake technique — along with strong lamination skills for croissants and viennoiserie. We have a point of view on what a great all-day French-leaning bakery looks like, but we're not looking for someone to just execute a fixed menu. We want a baker who can bring their own craft and ideas to the program, refine our offering over time, and help shape what Henrietta's bakery case becomes as we grow.
What we're looking for
Proven experience running a bakery program or serving as head/lead baker in a professional kitchen Strong command of natural leaven/sourdough technique and daily production scheduling Comfort managing consistent output at volume (baking is scaled up from a half-capacity opening toward full daily production) Experience training and leading a small team A collaborative mindset — this role works closely with our Executive Chef and coffee/service teams as part of one all-day operation Laminated dough / viennoiserie experience is a strong asset
