About Us: SHINYA 深夜 is bringing an upscale, specialized Hand Roll Sushi Concept to the heart of Saint-Sauveur. We are seeking a visionary Head Sushi Chef to lead this specialized program and redefine the guest experience. This is a high-level leadership role for a culinary professional who balances the technical precision of hand-rolled sushi with a sophisticated understanding of Japanese beverage pairings.

Responsibilities:
- Lead, mentor, and manage the sushi bar and kitchen team.
- Oversee the technical precision, preparation, and presentation of our hand roll program.
- Curate and collaborate on sophisticated menu items and Japanese beverage pairings (Sake, Whisky, etc.).
- Manage inventory, premium ingredient sourcing, and food cost controls.
Requirements:
- Proven experience as a Head Sushi Chef or Executive Chef in a premium environment.
- Masterful technique in hand-rolled sushi and deep knowledge of Japanese culinary traditions.
- Strong leadership skills and a passion for interacting with guests at an intimate sushi bar.
- Must be locally based or within a daily commuting distance to Saint-Sauveur.
Pay: $80,000.00-$100,000.00 per year
