Position Summary
We are seeking an experienced Fish Cutter / Fish Processing Specialist with extensive knowledge of handling, cutting, filleting, portioning, and processing a wide variety of freshwater and saltwater fish species. The successful candidate must be skilled in producing high-quality cuts while maintaining food safety, sanitation, and quality standards.
Key Responsibilities
- Cut, fillet, skin, bone, trim, and portion all types of freshwater and saltwater fish.
- Process whole fish into customer-ready products according to specifications.
- Identify various fish species and determine proper cutting and processing methods.
- Remove scales, bones, skin, and other unwanted portions with minimal product waste.
- Prepare fish for retail, wholesale, restaurant, and seafood market distribution.
- Ensure all products meet quality, freshness, and presentation standards.
- Operate and maintain fish processing equipment, knives, saws, and other cutting tools safely.
- Monitor product quality, freshness, and proper storage conditions.
- Follow all food safety, sanitation, HACCP, and workplace health and safety regulations.
- Always maintain a clean and organized work area.
- Assist with receiving, inspecting, and storing seafood inventory.
Qualifications & Experience
- Minimum 3–5 years of experience as a fish cutter, fish processor, or seafood butcher.
- Proven ability to process and cut all major freshwater and saltwater fish species.
- Extensive knowledge of fish anatomy, filleting techniques, portion control, and yield maximization.
- Experience working in seafood processing plants, fish markets, wholesale seafood operations, or commercial kitchens.
- Strong knife skills and the ability to work efficiently in a fast-paced environment.
- Knowledge of food handling, sanitation, and seafood safety regulations.
- Ability to stand for extended periods and lift up to 50 lbs (23 kg).
- Reliable, detail-oriented, and committed to maintaining high product quality.
- Must be willing to undergo a criminal background check upon hire
Preferred Qualifications
- HACCP, Food Safety, or Seafood Handling Certification.
- Experience with commercial seafood processing equipment.
- Ability to train and mentor junior fish cutters.
Work Conditions:
- Warehouse and food production environment.
- Require working in refrigerated or cold storage areas.
- Use of personal protective equipment (PPE) as required.
