Seeking an experienced Restaurant General Manager with a proven record of successfully operating a high-volume restaurant. This position is intended for an individual who has personally managed every aspect of a restaurant's daily operations and financial performance. Applicants must possess direct, hands-on experience in the responsibilities outlined below.
The successful candidate must have demonstrated experience in:
- Reviewing the previous day's sales, labour percentage, food cost performance and key operating results before the commencement of each business day.
- Preparing daily operational action plans based upon sales performance, staffing requirements, operational deficiencies and business priorities.
- Preparing, monitoring and adjusting daily labour deployment to maintain established labour cost objectives while meeting customer demand.
- Preparing weekly employee schedules based upon projected sales, business trends and labour budgets.
- Reviewing employee attendance, punctuality, productivity and overall work performance on a daily basis.
- Recruiting, interviewing, hiring, training, coaching, evaluating and, where necessary, disciplining and terminating employees.
- Reviewing inventory levels daily and preparing accurate purchasing orders to ensure uninterrupted operations while avoiding excessive inventory.
- Monitoring inventory movement, product usage, food waste, portion control and production yields to maintain established food cost targets.
- Conducting and reconciling weekly and monthly inventory counts and investigating inventory variances.
- Reviewing daily cash reports, point-of-sale reports, cash reconciliation, voids, discounts, refunds and deposit accuracy.
- Completing daily opening, operating and closing management inspections to ensure operational readiness and identify deficiencies requiring immediate corrective action.
- Monitoring daily sales trends, average guest cheque, menu mix and promotional performance while identifying opportunities to increase sales and profitability.
- Reviewing Google Reviews, guest feedback and customer complaints each day, implementing corrective action and ensuring timely follow-up where appropriate.
- Identifying operational deficiencies before they become customer complaints and implementing immediate corrective measures.
- Preparing written action plans, assigning responsibilities, establishing completion dates and following through until each task has been successfully completed.
- Preparing, reviewing and interpreting restaurant operating reports and utilizing those reports to improve operational performance and profitability.
- Managing the business through planning, analysis, measurement and accountability rather than reacting to problems after they occur.
This position is intended for a professional restaurant operator who understands that successful restaurant management extends well beyond supervising employees. It requires disciplined planning, financial analysis, operational control, inventory management, labour management, coaching, problem solving and continuous follow-through.
