FinePrint is one of Alberta's top restaurants. A fine-casual Continental restaurant with a soft French influence, located in the original 1887 Calgary Herald building on Stephen Avenue. We run a Josper grill, serious ingredients, and a hospitality standard that sets us apart in the Calgary market. We are looking for our next Executive Chef.
This is a long-term role with an equity path. We are not filling a vacancy — we are building a culinary partnership.
The role
You will own the kitchen entirely — food quality, food cost, inventory, labour, team development, and supplier relationships. You will work collaboratively with ownership. You will manage COGS to under 30% and BOH labour to under 32%, and you will report on variances weekly. No new dish goes live without a completed recipe cost card and ownership approval.
You must have
— 5+ years BOH leadership in fine dining or premium casual — Verifiable food cost management experience — you can state your targets and results from memory — Formal inventory system experience (Optimum Control or equivalent) — Stable employment history — more than 3 employer changes in 3 years is a disqualifier — Strong professional presentation consistent with an upscale Calgary dining environment Applications that do not include these will not be reviewed.
Asset backgrounds: Toptable Group, Fairmont, Earls/Cactus/corporate, Oliver & Bonacini, Four Seasons, or Michelin-adjacent kitchens.
Compensation
Competitive base salary (disclosed on first call) + $2,000 COGS bonus + $2,000 labour bonus + equity option after 3 months + Olympia Health benefits + $500 health club reimbursement. Relocation assistance available for out-of-province candidates.
A paid trial shift is required before any offer is made. Candidates who decline this step are not considered further.
