The Opportunity
We are seeking a skilled, organized, and motivated Daytime Sous Chef to join our opening team. This is a key leadership role focused on overseeing our daytime services, prep, and receiving, ensuring smooth daily operations, and maintaining our standards of quality, consistency, and presentation.
Working closely with the Head Chef, you will be responsible for leading the daytime kitchen team, managing prep, and ensuring the proper receiving, handling, and organization of all deliveries. This is an excellent opportunity to be part of a new restaurant from the ground up and contribute meaningfully to shaping its culture and success.

Key Responsibilities
Daytime Kitchen Leadership & Service
- Oversee and lead daytime services, ensuring smooth, efficient execution.
- Supervise, support, and motivate the daytime kitchen team.
- Ensure all dishes meet Ruby’s standards for quality, consistency, and presentation.
- Maintain a clean, organized, and service-ready kitchen environment.
Prep Management & Operational Readiness
- Oversee daily prep and mise en place to ensure the kitchen is properly set up for service.
- Manage prep priorities to support both daytime service and upcoming dinner needs.
- Ensure proper labelling, rotation, and storage of all products.
Receiving & Inventory Control
- Receive and verify all deliveries for quality, accuracy, and proper specifications.
- Ensure all goods are handled, stored, and rotated according to food safety standards.
- Communicate any discrepancies or quality concerns promptly.
- Assist with inventory organization and control.
Food Safety & Standards
- Uphold the highest standards of cleanliness, food safety, and organization.
- Ensure compliance with all health and safety regulations.
Team Culture & Collaboration
- Foster a positive, respectful, and professional kitchen culture.
- Collaborate with the Head Chef and leadership team to ensure operational success.
- Help train and develop junior team members.
Qualifications
- 2+ years of experience as a Sous Chef or strong Junior Sous Chef in a quality-focused kitchen.
- Strong organizational and time-management skills.
- Experience with high-volume brunch and lunch service is a strong asset.
- Solid culinary foundation with attention to detail and consistency.
- Experience receiving and managing food deliveries preferred.
- Strong leadership and communication skills.
- Positive attitude and team-first mindset.
- Culinary education is an asset but not required.
