POSITION SUMMARY:
Under the direction of the Executive Chef and Executive Sous Chefs and in close cooperation with the Sous Chefs and Journey Person Cooks, prepares food and assists in directing food production.
Responsible for maximizing production and maintain the standards of food quality, presentation and cost, kitchen cleanliness, sanitation and organization and teamwork and cooperation in the kitchen and between the kitchen and service departments, so that the guest receives the standards of excellence for which s/he is paying.
Responsible for contributing to the growth and increased success of the resort Food and Beverage Division, under the direction of the Kitchen Management team.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Produce pastries, cakes, pies, and all desserts as required.
- To provide support and cooperation to co-workers.
- To assist in directing stewards.
- To ensure that food is prepared adhering to the recipes in the kitchen.
- To ensure that all dessert items are prepared per the requirements of the Executive Chef and/or Banquet Event Orders (BEO).
- To ensure that food is presented to the standard, including time, determined by Kitchen management.
- To recommend improvements to the standards to Kitchen management.
- To provide training and direction to new team members as assigned by Kitchen management.
- To support the Human Resources policies and procedures in the kitchen.
- To support the Collective Agreement in the kitchen.
- To support the initiatives of associate programs and committees.
- Some stress resulting from daily guest interactions (internal and external), budgetary, and time constraints.
- Perform other job related job duties as assigned.
ESSENTIAL SKILLS AND ABILITIES:
- Minimum 3 years’ experience in a busy fast paced kitchen environment.
- Cooks Training Certificate.
- Apprenticeship.
- Food Safe certificate.
- WHMIS is preferred.
- First Aid is an asset.
- Ability to understand and follow recipes, costings and menus.
- Ability to define problems, collect data, establish facts, and draw valid conclusions.
- Ability to interpret an extensive variety of technical instructions in mathematical or diagram form and deal with several abstract and concrete variables.
- Excellent organizational skills required.
- Excellent knowledge in pastries and a variety of desserts.
- Ability to work with a variety of staff to consistently produce results.
- Excellent communication skills.
- Ability to communicate in fluent English with different cultures and ensure compliance with standards, rules and regulations.
- Ability to read and interpret documents such as menus, production schedules, and other reports, and procedure manuals.
- Complete assigned duties on time while meeting company and resort standards.
- Keep wastage to a minimum.
- Contributes to customer service by demonstrating a willingness to meet individual customer needs.
- Ability to multi task and prioritize required.
- Ability to give and take direction well required.
- Being multi lingual is an asset.
- Flexible to a changing schedule.
