The Fish Cutter is responsible for preparing, filleting, trimming, and packing seafood products in accordance with company standards. This role also supports cleanliness, organization, and safety in the processing room while ensuring compliance with food safety regulations.
Key Responsibilities
Assist with filleting, trimming, and portioning seafood products according to specifications.
Ensure quality by checking for bones, defects, and proper cut sizes.
Operate knives and other hand tools safely and efficiently.
Package and label fillets for shipping or storage following company proceduresMaintain a clean and sanitary work area, including
equipment and tools.
Dispose of waste materials in line with sanitation and safety guidelines.
Assist with loading/unloading materials and moving products within the facility.
Follow all Canadian food safety, hygiene, and health & safety regulations when handling seafood.
Monitor and record daily supply counts (boxes, bags, cleaning supplies, blades).
Weigh halibut in totes as required.
Support order picking and other general labor tasks during slower production periods.
Qualifications
Previous experience in seafood processing or food production is required.
Ability to work in a cold, wet environment for extended periods.
Strong attention to detail, accuracy, and manual dexterity.
Physically able to stand for long periods and lift up to 60 lbs.
Team-oriented, reliable, with good communication skills.
Ability to follow instructions and adapt to new tasks.
Must be able to read, write, and speak English; bilingual ability in Chinese is considered an asset.
Must be available to work Saturdays as required.
Flexibility to stay longer on certain days to complete orders.
Valid Food Handler's Certification (to be renewed every 5 years).
Work Conditions
Cold and wet environment.
Use of protective gear such as gloves, aprons, hairnets, and rubber boots is mandatory.
