POSITION OVERVIEW
As a Prep Cook, you'll play a key role in our culinary team, responsible for preparing ingredients and components that set our line cooks up for success during service. In this role, you'll work closely with kitchen staff to execute prep lists efficiently while maintaining high standards of food quality, consistency, and safety.
SKILLS AND QUALIFICATIONS
- Previous experience as a prep cook, line cook, or in a similar food service role
- Solid knife skills, including proper cutting, dicing, julienning, and portioning techniques
- Knowledge of cooking techniques, food safety standards (including HACCP principles), and kitchen equipment operation such as slicers, mixers, and food processors
- Understanding of proper food storage, labeling, and rotation practices (FIFO)
- Basic math skills for scaling recipes, converting measurements, and managing portion counts
- Ability to read and follow standardized recipes and prep lists accurately and consistently
- Ability to work efficiently in a fast-paced environment while maintaining attention to detail and consistency
- Strong communication and teamwork skills, with the ability to collaborate effectively with kitchen staff and management
- Ability to multitask and prioritize competing prep demands during busy periods
- Flexibility to work various shifts, including mornings, evenings, weekends, and holidays
- Physical stamina and the ability to stand for extended periods of time. You're comfortable being on your feet and staying active throughout your shift
- Capable of lifting objects weighing up to 50 pounds
- Comfortable working with sharp tools, hot equipment, and in a physically demanding environment
DUTIES & RESPONSIBILITIES
- Prepare ingredients and components according to prep lists and par levels ahead of service, including washing, peeling, chopping, marinating, and portioning
- Follow standardized recipes and portioning standards to ensure consistency across shifts and locations
- Measure and weigh ingredients accurately to maintain recipe integrity and control food costs
- Label, date, and rotate stock following FIFO principles to minimize waste and spoilage
- Monitor and communicate inventory levels of prepped items to kitchen leadership
- Properly store prepped items at correct temperatures to maintain food safety standards
- Assist line cooks during peak service when needed, restocking stations and replenishing prepped items
- Set up and break down prep stations, ensuring all tools and equipment are cleaned and stored properly
- Adhere to all health and safety regulations and guidelines, including proper handwashing and cross-contamination prevention
- Maintain excellent food execution and food safety compliance at all times
- Follow opening and closing procedures and checklists to keep the kitchen running smoothly
- Work as a team to keep a clean and sanitary work area, including regular sanitation of surfaces and equipment
- Communicate shortages, quality issues, or equipment malfunctions to kitchen leadership in a timely manner
- Support kitchen leadership with inventory counts and receiving deliveries when required
AVAILABILITY REQUIREMENTS
- This role requires flexibility to work evenings, weekends, and holidays. Typical shifts range between 4–8 hours and extend into late night hours.
