With the arrival of our new Chef de Cuisine, Brett Yamashiro, join us at Vista 18 for this exciting new chapter with renewed focus on elevated dining.
We are seeking a leader in the kitchen who thrives in a fast paced work environment. This role is expected to lead the line through dinner service and will be the go-to person in the absence of the Chef de Cuisine, Sous Chef and Jr. Sous Chef.
The First Cook typically works evening shifts, with an average of four to five days per week. This role can expect to work weekends and holidays.
Main responsibilities include:

Prepare and cook all aspects of the food production for Vista 18, Clive’s Classic Lounge & Room Service in accordance to hotel standards

Work a kitchen station and lead the team during service, ensuring efficiencies in workflow and organization

Manage mise en place ensuring proper rotation of products. Ensure stations are stocked appropriately for business levels.
- Thoroughly clean and close station after service and hold the team accountable for maintaining high standards.
- Supervise and mentor junior kitchen staff, providing training and direction

Inventory management and waste control, communicating stock levels and ordering needs according to the kitchen procedures

Receive and stocking of deliveries for the kitchen

Inventory of walk in, storage and refrigerators for stock rotation and ensure all equipment in the work area is properly cleaned

Report any equipment in need of repair to the Sous Chef or Chef de Cuisine

Work in a safe manner to ensure total compliance with all health and safety regulations

Perform other duties as necessary and assigned
Qualifications:

Must have a valid Food Safe level one or equivalent.

Minimum of 2 years’ experience in similar position required.

Ability to work in a fast paced environment. Multi-tasking, and working within a dynamic team.

Ability to maintain professionalism and a positive and team focused attitude.

Excellent written and verbal communication skills.

Formal culinary education is considered an asset as is Food Safe level two certification or equivalent.
