We are currently looking for a BUTCHER to join our dynamic team at BLACK+BLUE STEAKHOUSE. SKILLS AND QUALIFICATIONS:·
· 2-3 years of butchery experience in a shop or similar restaurant setting
Cutting and Packaging meat and fish products
· Delivering to the specific requirements of the Executive Chef
· Maintaining and ensuring the quality and standards of meat in the restaurant
· Ensuring the proper storage and handling of the products
· Maintaining cleanliness and hygiene of the work area
· Complying with all the Food Safe standards of operating, storing and processing
· Coordinating working with the Team of Chefs
· Cut, trim, tie, grind meats such as beef, pork, poultry and fish to prepare meat to a service ready form
· Estimate daily requirements for product
· Receive, inspect and store meat upon delivery to ensure meat quality
· Skills and Specifications:
· Must possess good written and verbal communication skills
· Must be familiar with all proper norms and techniques of handling food products
· Must be compliant with using all tools and equipment for cutting meat and possess the awareness of food preparation procedures
· Must ensure par levels of product are met daily
· Must have knowledge of basic culinary terminology as well as knowledge of cuts and meat preparation techniques
· Must be able to lift up to 50 lbs and work in standing position for up to 9 hours
