Job Title: Cook (Teppanyaki & Sushi)

Position Overview
We are looking for energetic and reliable Cooks to join our team at Edo Japan. In this hands-on role, you will prepare high-quality Japanese dishes including teppanyaki-style meals and fresh sushi in a fast-paced quick-service environment. You will play a key role in delivering great food and excellent customer experiences while maintaining top standards of cleanliness and efficiency. Must be able to rotate for front of house, taking customer orders and customer service.

Availability Requirement: Must be available for nights and weekends (evenings, Friday–Sunday, and holidays as needed).
Key Responsibilities
Food Preparation & Cooking
- Prepare and cook a variety of Edo Japan menu items including teppanyaki-style dishes (stir-fried meats, vegetables, noodles, rice) and fresh sushi (rolls, nigiri, sashimi, and related items).
- Follow standardized recipes, portion controls, and presentation guidelines to ensure consistent quality and taste.
- Work efficiently during peak hours on the grill, sushi station, and other kitchen lines.
- Maintain high standards of food safety, proper handling, and sanitation at all times.
Operational Support
- Support daily kitchen operations including opening/closing duties, equipment maintenance, and station setup/cleanup.
- Assist with inventory management by rotating stock (FIFO), labeling items, and reporting low stock levels.
- Contribute to efficient food costing by minimizing waste and following proper portioning.
- Maintain exceptional cleanliness throughout the kitchen, dining area support zones, and workstations.
Teamwork & Customer Service
- Collaborate with team members to ensure smooth service during busy periods.
- Provide friendly and efficient support to front-of-house staff and occasionally assist with customer service when needed.
- Uphold Edo Japan brand standards in food quality, speed of service, and presentation.
Additional Duties
- Participate in store audits and health inspections preparation.
- Complete required food safety training and certifications.
- Support promotional activities and new menu item rollouts.
- Report any maintenance or safety issues to management promptly.
Career Progression Opportunities
- Short-term: Advance to Senior Cook or Lead Cook with increased responsibility and pay.
- Medium-term: Move into Kitchen Supervisor or Assistant Manager roles.
- Long-term: Pathway to General Manager or multi-unit leadership positions for strong performers.
- Ongoing training in advanced sushi techniques, leadership skills, and operational management provided.
Qualifications & Requirements
- Previous cooking experience in a restaurant environment (Japanese, Asian, or QSR preferred but not mandatory).
- Hands-on knowledge or willingness to learn teppanyaki cooking and sushi preparation.
- Ability to work quickly and accurately under pressure.
- Must be available for nights and weekends.
- Food Safe Level 1 certification (or willingness to obtain immediately).
- Positive attitude, strong work ethic, and team player mindset.
- Ability to stand for long periods and lift up to 50 lbs.
- Must be eligible to work in Canada.
