THE OPPORTUNITY:
Pheasant Glen Golf Resort is launching an exciting new restaurant concept within the Clubhouse, Coyote Bills & The Dutton Chop House and is looking for an experienced Sous Chef to be part of the culinary leadership team for the restaurant, outdoor patios and event spaces.
The restaurant is a key component of the new Clubhouse and is the vibrant heart of Pheasant Glen Golf Resort, offering a welcoming space to relax and connect, where you can savour West Coast-inspired cuisine, enjoy drinks on the expansive decks, or celebrate a special event.
The restaurant and food & beverage facilities will consist of:
- Restaurant with 100 seats indoors
- Patio seating for 200, 100 enclosed and 100 seats open
- Conference room with licensing for up to 200 guests
ABOUT THE POSITION
Pheasant Glen Golf Resort is looking for the ideal culinary leadership candidate as an addition to the management team.
The Sous Chef, Coyote Bills & The Dutton Chop House willwork closely with the Executive Chef to ensure the overall success of all kitchen operations and food production for the restaurant, banquet functions and golf-side food outlets at Pheasant Glen Golf Resort.
The Positionis a key leadership role in the kitchen—supporting the Executive Chef in daily operations, managing the kitchen team, ensuring food quality, inventory management, and helping shape menus that reflect seasonal, locally inspired ingredients. The Sous Chef will also be instrumental in banquet planning and execution.
The Position will be knowledgeable regarding all health & safety compliance and standards, Hazard Analysis and Critical Control Points (HACCP) and provide training related to food safety hazards during food handling, preparation, cooking and storage.
Reporting directly to the Executive Chef, you will strive for efficiency in kitchen operations and team productivity with a commitment and focus on delivering exceptional dining experiences aligned with the brand and exemplify the highest level of business conduct and personal ethics.
KEY RESPONSIBILITIES:
o Kitchen Team Leadership & daily supervision, providing visible mentoring and support to the kitchen team, and overseeing all kitchen operations in the absence of the Executive Chef.
o Collaborate with the Executive Chef on menu development, including seasonal and special menus ensuring they align with Coyote Bills & The Dutton Chop House brand standard.
o Providing training on new menu items, coaching the kitchen team on a continuous basis.
o Assisting with the development of standard menu recipes, food preparation & presentation techniques to ensure consistent quality, minimize food costs, exercise portion control.
o Maintain a positive kitchen culture with management practices that focus on teamwork, innovation, continuous improvement and customer service excellence.
o Monitoring the scheduling for the kitchen team to meet all daily service requirements and business levels while being mindful of labour costs.
o Maintaining high culinary standards through consistent food presentation, quality and innovation in all food preparation.
o Monitoring and overseeing food inventory control policies, stock levels, rotating supplies, and help manage food costs and reduce waste.
o Maintaining and carrying out all Health and Safety practices and ensure all reporting kitchen team adhere to HACCP and WorkSafe principles and guidelines, and that the kitchen is in compliance with all statutory health regulations and workplace safety standards.
o Collaborate with the front of house team to ensure memorable guest experiences.
o Maintain compliance with federal, provincial, and local employment laws and regulations by following company policies and practices to maintain legal compliance.
o Ensuring the culinary standards are such that the local community and residents will see Coyote Bills & The Dutton Chop House as the dining destination on the mid island.
QUALIFICATIONS, SKILLS & EXPERIENCE
As a Hospitality Leader, you have:
o Culinary Degree/Diploma or certificate such as Red Seal or equivalent.
o Minimum five (3) years’ experience in kitchen management.
o Proven experience in a supervisory capacity in a high-quality kitchen operation.
o Strong demonstrated proficiency in all aspects of kitchen management and food production.
o Experience in establishing Health and Safety standards and developing regulations such as HACCP.
o Experience with inventory management, budgeting and cost controls.
o Strong leadership and team mentoring skills.
o Excellent organizational and cost management skills.
o Experience with events and banquets
o Experience and proficiency using point-of-sale (POS) systems and inventory management software.
o Experience with inventory management, budgeting and cost controls.
o Strong leadership and team mentoring skills.
o A reputation for uncompromising professional integrity, personal values, with a focus on customer service excellence.
o Independent self-starter with an entrepreneurial approach to business and able to work with minimal supervision.
Must be eligible to work in Canada.
COMPENSATION PACKAGE:
- Base salary $75,000 - $85,000 per year, wage offered is determined by multiple factors, including job-related skills and relevant education/experience.
- Benefits package – after first six months of employment
- Opportunity for Short Term Incentive pay (bonus) based on performance and at the sole discretion of the company.
- Annual Vacation – 2 weeks (10 workdays)
