What You’ll Do
-
Maintains a clean and sanitary work area by adhering to all sanitation and hygiene procedures, including sweeping, and mopping of the kitchen floor as required.

Washes, prepares, dices and or cooks various food (i.e., vegetables, potatoes, rice).
-
Butchers and portions all meats, fish and poultry.
-
Prepares derivative sauces using mother sauce in accordance with Standard Recipe Files.
-
Prepares and serves menu items in accordance with the Kitchen Menu Knowledge File.
-
Cooks breakfast as assigned.
-
Ensures proper heating, reheating, and storing of food in accordance with Public Health Regulations.
-
Assists in serving Banquets and Tours as needed; assists the Supervisor with the banquet and tour Lines.
-
Required to prepare hot and cold Canapés, meat and seafood platters for show pieces and banquets.
-
Supervise kitchen staff and monitor all areas of the kitchen for food quality, service and provides the required training, as necessary.

Manages inventory levels and inspects quality of food-notifies issues and shortages to Chef or Designate and prepares requisition orders, as necessary.

Monitors function sheets and daily forecasts to ensure inventory levels and production deadlines are met.

Co-ordinates Kitchen operation with FOH Managers as it affects food quality, quantity, and schedules.

Co-ordinates and delivers BOH daily pre-shift information sessions and attends FOH daily pre-shift information sessions as required.

Ensures staff under their Supervision works in compliance with the Occupational Health and Safety Act, WHMIS, Safe Food handling, and established policies and procedures and are provided with the required training.

Works in compliance with Occupational Health and Safety Act, First Aid, WHMIS, AGCO Regulations, Safe Food Handling Regulations, Recycling Programs and established policies and procedures.

Provides guests with information regarding NPC Attractions and Events.

Promotes a positive image of the Niagara Parks Commission.

Provides quality customer service that meets NPC Standards.

What You’ll Bring
-
Completion of a Secondary School Diploma or equivalent knowledge or experience.
-
Completion of the Cook Apprentice Program or equivalent knowledge or experience.
-
A minimum of one (1) year experience as a Chef de Partie or equivalent experience.
