About Us
Oruma Multi Cuisine Bistro is known for its vibrant flavors and authentic dishes, with a special focus on Kerala and South Indian cuisine. We are looking for a skilled and passionate Line Cook who understands traditional spices, techniques, and consistency.
Key Responsibilities
- Prepare and cook authentic Kerala & Indian dishes (e.g., biriyani, curries, fry items, tandoor dishes if applicable)
- Execute recipes with consistency in taste, spice balance, and presentation
- Handle mise en place and ensure stations are fully stocked
- Maintain cleanliness and organization of the kitchen
- Monitor portion control and minimize food waste
- Work efficiently during high-volume service
- Follow all food safety and sanitation standards
Requirements
- Experience in Kerala / South Indian / Indian cuisine is strongly preferred
- Strong knowledge of spices, masalas, and traditional cooking techniques
- Ability to work in a fast-paced, team-oriented environment
- Good time management and multitasking skills
- Flexible availability (evenings, weekends, holidays)
- Food Handler Certification (preferred)
Bonus Skills (Nice to Have)
- Experience with Malabar cuisine (kizhi biriyani, appam, seafood dishes)
- Tandoor experience
- Catering or bulk cooking experience
