Position Summary
The Prep Cook supports all kitchen operations through the preparation of ingredients, organization of kitchen workspaces, and assisting chefs and line cooks with daily production. This position plays a vital role in ensuring the kitchen is fully prepared for service by maintaining high standards of food quality, sanitation, organization, and efficiency while contributing to a collaborative team environment.
MAJOR RESPONSIBILITIES:
- Food Preparation & Culinary Operations
- Prepare vegetables, fruits, herbs, proteins, and other ingredients by washing, peeling, chopping, dicing, slicing, julienning, and portioning according to standardized recipes.
- Measure and prepare ingredients for sauces, dressings, marinades, soups, stocks, and other recipes.
- Complete basic cooking tasks including preparing stocks, blanching vegetables, reducing sauces, and cooking simple components as directed.
- Ensure all prepared items meet Kelowna Yacht Club quality standards for freshness, consistency, and presentation.
- Set up, organize, and maintain clean and efficient prep stations throughout each shift.
- Support chefs and line cooks with production needs before and during service.
- Maintain cleanliness and organization of all kitchen work areas, equipment, and prep spaces.
- Foster effective communication with culinary leadership and fellow team members.
Food Safety & Kitchen Administration
- Follow standardized recipes, production sheets, and preparation procedures accurately.
- Label, date, rotate, and properly store all products using FIFO (First In, First Out) principles.
- Adhere to all Food Safe, sanitation, allergy awareness, and workplace safety standards.
- Assist with minimizing food waste through proper preparation, portioning, and storage practices.
- Support receiving, inspecting, and storing food deliveries while ensuring product quality and proper temperatures
Inventory Control & Organization:
- Assist with daily prep lists and production planning to ensure adequate product availability.
- Monitor ingredient levels and communicate shortages to supervisors.
- Maintain organized coolers, freezers, dry storage, and prep areas.
- Ensure all products are properly labelled, stored, and rotated to maintain freshness and food safety.
- Assist with inventory counts and stock replenishment as assigned.
Cleaning & Team Communication:
- Clean and sanitize prep areas, cutting boards, utensils, equipment, dishes, and kitchen tools throughout each shift.
- Dispose of waste and recycling according to Club procedures.
- Communicate effectively with chefs regarding prep completion, product shortages, or quality concerns.
- Participate in team meetings, training sessions, and continuous improvement initiatives.
- Support a positive, respectful, and team-oriented kitchen culture.
Education and Knowledge:
- Culinary education or previous commercial kitchen experience preferred.
- Food Safe Level 1 Certification required (or ability to obtain upon hire).
- Previous experience as a Prep Cook, Kitchen Assistant, or similar role is considered an asset.
Skills and Abilities (Minimum Required):
- Strong knife skills and ability to produce consistent cuts and portions.

Professional / Technical Knowledge (Minimum Required)
- Passion for the culinary industry and continuous learning.
- Knowledge of food preparation techniques and basic cooking methods.
- Strong understanding of food safety, sanitation, and cross-contamination prevention.
- Familiarity with FIFO inventory rotation and proper food storage practices.
- Knowledge of workplace safety standards, including WCB and WHMIS requirements.
- Commitment to maintaining a clean, organized, and professional kitchen environment.

Pay: $22.00-$26.00 per hour
