Overview
We are seeking a dedicated and skilled Line Cook with proven experience in authentic Italian cuisine. This role requires a deep appreciation for Italian culinary traditions and hands-on knowledge of regional techniques, including pizza-making, fresh pasta, and the use of quality Italian ingredients. Key Responsibilities
- Prepare traditional Italian dishes using fresh, seasonal, and high-quality ingredients
- Assist with handmade pasta production and authentic pizza preparation techniques (e.g. stretching, cooking in a wood-fired oven)
- Execute precise plating and portioning with attention to presentation and consistency
- Work closely with the chef team to ensure efficient and timely service
- Maintain strict kitchen cleanliness and uphold all food safety and hygiene standards
- Contribute to prep duties, daily mise en place, and kitchen closing tasks
- Support smooth service flow, especially during high-volume periods
Qualifications & Skills
- Minimum 5-7 years of professional kitchen experience, with a strong focus on Italian cuisine
- Demonstrated skills in pizza-making techniques and fresh pasta preparation
- Knowledge of Italian ingredients, regional cooking methods, and traditional culinary terms
- Strong knife skills and ability to execute various cooking methods with precision
- Ability to follow recipes, maintain consistency, and work efficiently under pressure
- Proven time management and multitasking in high-paced environments
- Sound knowledge of food safety practices and kitchen hygiene protocols
- Reliable, team-oriented, and committed to high standards of culinary execution
Education & Credentials
- High school diploma or equivalent required
- Culinary diploma or certificate from a recognized culinary institution preferred
- Specific training in Italian cuisine or mentorship under Italian chefs is a strong asset
- Valid Food Handler’s Certificate (or ability to obtain prior to start date)
- WHMIS or workplace safety certification is considered an advantage
