The Role
We're looking for a Sous Chef who is as comfortable leading a lunch rush as they are mentoring a new line cook through a challenging service. You'll be the right hand to our Chef de Cuisine — a daily presence on the floor, a keeper of standards, and a builder of culture in our kitchen.
This is not a clipboard role. You'll be cooking, coaching, and holding the line with your team every shift.
What You'll Do
- Lead and support daily kitchen operations across prep, service, and close
- Maintain and elevate the quality, consistency, and presentation of Capo's Italian menu — pasta, antipasti, and shareable small plates
- Train, develop, and inspire a tight-knit kitchen team that shares your commitment to craft
- Uphold food safety, sanitation, and FIFO standards at all times
- Collaborate with the Chef de Cuisine on menu evolution, seasonal adjustments, and special events
- Manage mise en place, inventory, ordering, and waste reduction
- Step into the Chef de Cuisine role when needed — you're the backup without the ego about it
- Contribute to a kitchen culture that mirrors our front-of-house energy: warm, energetic, and proud of what we put on the plate
Who You Are
- 3+ years of progressive kitchen experience, including at least 1 year in a supervisory role
- Genuine passion for Italian cuisine — pasta, antipasti, seasonal Italian ingredients, and traditional technique
- A natural leader who earns respect through skill, consistency, and calm under pressure
- Organized and systems-minded — you think in terms of setup, not just execution
- A communicator who gives clear direction and real feedback
- Adaptable to a high-volume, fast-paced environment without sacrificing quality
- Food Safe certified (BC) or able to obtain before start date
