This is a combined cook and sanitation role. You will cook menu items during service and own the cleanliness and food-safety condition of the kitchen across your shift. The position is built for an operator who can move between the cook line and the wash station without losing pace.
This is not a fine-dining kitchen. It is a fast, retail-volume hot kitchen. Speed, consistency, and a clean station are the job.
What you will do — cooking (primary)
- Prepare and cook menu items to recipe and portion standards
- Hit service and delivery timing without compromising recipe or batch size
- Monitor and log cooking times and holding temperatures for every batch
- Pull any hot case item below 60°C and discard if it cannot be brought back to safe holding fast (no repackaging into cold or finger food as a workaround)
- Receive and store food supplies, rotate stock first-in first-out
- Flag short-dated or damaged product to the manager before it hits the line
- Assist with inventory counts on the schedule the manager sets
- Help train new kitchen staff on station technique and our standards
What you will do — sanitation and kitchen maintenance (equal priority)
- Clean and sanitize hotel pans, pots, cooking utensils, prep equipment, and the dish machine
- Note: this role does NOT wash customer-facing plates or glasses, but owns every cooking and prep surface
- Operate the dish machine and run routine checks on temperature and chemical levels
- Clean and maintain HMR (Hot Meal Ready) and cold display units, stainless steel counters, glass surfaces, dry storage, coolers, walk-in cooler, and walk-in freezer
- Sweep, mop, and sanitize kitchen floors daily, with a full closing clean at end of shift
- Take out garbage, recycling, and organic waste every night
- Track cleaning supply levels and notify the manager before anything runs out
What we are looking for
- 2 plus years of cooking experience (3 plus for the top of the pay band)
- Valid Food Handler Certification
- Food Safe, SafeCheck, or equivalent
- Comfortable in a fast-paced, high-volume environment
- Able to stand for full shift, lift up to 20 kg, work in walk-in cooler and freezer
- Available evenings, weekends, and holidays
- Working English proficiency
- Secondary School preferred
