Overview
The Night Shift Prepper is responsible for preparing ingredients and assembling food items such as BBQ skewers and sprng rolls for production. The role ensures all items are properly portioned, prepped, and ready for cooking maintaining consistency, food safety, and speed for high-volume service.
Responsibilities
- Prepare ingredients for pork BBQ skewers (cutting, portioning pork, vegetables, and sauces)
- Assemble and roll spring rolls according to standard recipe and portion sizes
- Skewer and organize BBQ
- Label, portion, and batch-prep items for next-day cooking or service
- Maintain food safety standards, including proper handling, storage, and temperature control
- Ensure consistent quality, size, and presentation of all prepped items
- Keep prep stations clean, sanitized, and organized throughout the shift
- Track inventory usage and report shortages or issues to the supervisor
- Follow recipes and standard operating procedures accurately
- Support overall kitchen efficiency during high-volume preparation periods
Requirements
- Experience in food prep, commissary kitchen, or fast-paced kitchen environment is an asset
- Ability to follow recipes and portion guidelines consistently
- Strong attention to detail and cleanliness
- Comfortable with repetitive hand work (rolling, skewering, portioning)
- Able to work overnight shifts reliably
- Good understanding of food safety and hygiene practices
- Team-oriented and able to work efficiently under time pressure
Working Conditions
- Night shift schedule (fast-paced prep kitchen environment)
- Sunday to Thursday 10pm to 6am
- Standing for long periods and repetitive food preparation tasks
- Exposure to raw meats and kitchen equipment
