Position Summary:
As a Cooking Room Operator, you are responsible for preparing, batching, and cooking sauces according to established recipes and production schedules. You will weigh and measure ingredients, operate and monitor cooking and mixing equipment, perform cleaning and sanitation tasks (including full Clean-in-Place cycles), ensure accurate record-keeping, and collaborate with QA and Production to maintain product quality and consistency.
This role is physically active and critical to ensuring that every product we produce meets Apex’s standards for safety, quality, and performance.
What You’ll Do:
- Prepare and batch sauces according to formulation sheets and production schedules
- Weigh, measure, and record ingredients accurately using scales and flow meters
- Operate and monitor kettles, shear mixers, pumps, agitators, and other cooking equipment
- Follow cooking parameters (time, temperature, pressure, agitation) and adjust as required
- Perform pre-start checks and ensure all equipment is clean and ready for use
- Complete full Clean-in-Place (CIP) cycles for kettles, transfer lines, and pumps following established procedures
- Perform end-of-day sanitation of the cooking room, ensuring all surfaces, tools, and equipment meet hygiene standards
- Complete and verify all batch sheets, CCPs, and cooking logs accurately and on time
- Communicate with QA and Production to release batches and address quality deviations promptly
- Monitor and maintain product consistency (pH, viscosity, color, and texture)
- Maintain a clean, organized, and safe work environment following Good Manufacturing Practices (GMPs)
- Support troubleshooting and perform basic mechanical adjustments to minimize downtime
- Follow all safety, sanitation, and food safety procedures at all times
- Assist with ingredient staging, tank transfers, and line support as needed
- Participate in continuous improvement initiatives to enhance safety, efficiency, and quality
What We’re Looking For:
- Experience: Previous experience in food manufacturing or cooking/batching operations preferred
- Technical Aptitude: Comfortable operating and troubleshooting mechanical and automated systems (kettles, shear mixers, pumps, valves, scales, etc.)
- Physical Capability: Able to lift and carry up to 25kg throughout the shift
- Attention to Detail: Strong math and documentation accuracy skills for measuring and recording ingredients and process parameters
- Food Safety & Sanitation Awareness:
- Knowledge of GMPs, allergen control, and sanitation best practices
- Experience performing CIP and manual sanitation of cooking equipment and production areas
- Critical Thinking: Ability to identify process deviations and take corrective action independently
- Team Player: Works well with Production, QA, and Maintenance to achieve daily targets
- Communication: Clear English communication skills—verbal and written
- Work Ethic: Dependable, punctual, and committed to producing high-quality work
- Adaptability: Able to work in a fast-paced environment with changing priorities
Schedule:
- Monday to Friday
- 7:00-3:30 p.m.
- Shift rotation may vary based on production demand, flexibility may be required.
