Full job description

Buongiorno

The Pizzaiolo plays a key role for the back of house team, especially here last Castelli Mercato. Acting as a leader, alongside the Executive Chef & Sous Chef, this individual will take a key role in the production and execution of the fine Napoletana Pizza's we make here. An experienced culinary talent, the pizzaiolo understands the workings of the pizza station, how they interact with other stations and what is required for success at each. The Pizzaiolo leads the line in the PREPARATION & PLATING & STRETCHING & TOPPING & COOKING of one of Hamilton's finest pizza's. The individual in this position thrives on surpassing guest expectations and providing an incredible culinary experience.

Responsibilities

Assists Executive Chef with all kitchen operations and preparation
Embodies a great culture, creates a high level of staff engagement
Works directly with members of all teams (line cooks, dining room & event servers, management and support staff) to ensure overall team organization
Help in the creation of new and seasonal menus
Ensure each station is prepared, mis en place is complete and sufficient for the upcoming service with all items neatly organized and stored properly
Maintain quality and consistency in the taste of all dishes throughout preparation and during service
Thoughtfully practice product care by rotation FIFO
Follow Chef’s lead to accommodate special requests, dietary restrictions and/or allergies of guests understanding the importance of adhering to established guidelines
Follow established cleaning schedule and always use proper food handling procedures
Understand how to properly and safely operate all equipment
Participate in product ordering and inventory- always being aware of low product counts or lack of product
Meticulously clean the kitchen, ensuring work areas are spotless and all product is properly stored
Demonstrate a sense of urgency while remaining poised during peak periods while seeking out additional tasks during slower periods

Qualifications

Food handler certification
WHMIS certification

Experience

Minimum of 3 years working in a professional kitchen
Sous Chef experience an asset
PIZZA EXPERIENCE IS HUGE

Skills

Advanced skills, organizational skills
Strong understanding of daily production needs and working within a budget for food costs and labour
Establishes and maintains open, collaborative relationships with employees

‘Family First’ is Daniel’s number one motto and as a result, some of his fondest memories come from Sunday night dinners, spent around the large dinner table, surrounded by love, and laughter. Food was always at the center of all of these family gatherings which led Daniel to spend much of his free time learning and creating traditional Italian dishes with his Nonna Linda and Nonna Concentina. From learning how to make pasta the real way ‘FATTO a mano’, to preparing the perfect pot of sugo, he learned the fundamentals of authentic Italian cooking.
