We are seeking an experienced Full-Time Chef de Partie to join our Kitchen Leadership Team at The Glencoe Club. This role is ideal for culinary professionals who thrive in a fast-paced, high-standard à la carte and banquet environment and are confident leading independently during service.
As a Chef de Partie, you will oversee daily execution and preparation of McCullough’s Pub A La Cart service while supporting the overall success of the kitchen operation. This role is also responsible for supervising our McCullough’s pub and staff cook team. You will provide direction, coaching, and leadership to line cooks, kitchen expeditors, and dishwashers while maintaining exceptional standards of food quality, consistency, cleanliness, and professionalism.
Successful candidates bring strong culinary fundamentals, previous supervisory experience, and a passion for delivering elevated dining experiences for members and guests.
Responsibilities:
- Lead and execute food service while ensuring consistency, quality, and timing standards are achieved
- Prepare and execute menu items, features, sauces, soups, proteins, and garnishes to established standards
- Collaborate with the Executive Chef on creating features and A La Cart menu items
- Review Banquet Event Orders to proactively prepare for events and plan accordingly with the Banquet team including the Front of House team to ensure successful event execution
- Supervise, coach, and support line cooks and support staff during preparation and service
- Assist with training and onboarding of culinary employees and reinforce kitchen standards and procedures
- Maintain strong communication with the Executive Chef, Sous Chefs, and front-of-house leadership during service execution, including attendance at daily Banquet, Front of House and Kitchen pre-function meetings
- Ensure compliance with all Alberta Health Services’ food safety, sanitation, and workplace safety requirements
- Foster a positive, respectful, and team-oriented kitchen culture, particularly during high-volume service periods
Qualifications:
- Minimum of 5 years culinary experience in a professional kitchen environment, including experience in high-volume restaurant operations and Banquets
- Diploma or certificate in culinary arts from a reputable culinary school
- Previous experience leading a team and providing direction to junior kitchen staff during service is required
- Demonstrated ability to work efficiently under pressure while maintaining high culinary standards and attention to detail
- Strong understanding of classic cooking techniques, including preparation of soups, sauces, stocks, proteins, seafood, and vegetables
- Valid Alberta-recognized Food Safety certification is required as well as experience with food allergies, dietary accommodations, and safe food handling practices
- Proven leadership and team-building skills with the ability to mentor, motivate, organize, and support staff through effective communication, collaboration, and conflict resolution
- Red Seal Certification or formal culinary training is considered a strong asset

Additional Details:
This is a full-time salaried position that reports to the Executive Chef. The successful candidate will be required to work primarily in the evening including weekdays, weekends, and holidays. Flexibility is required, as shifts may vary and can begin as early as 7:00 a.m. or end as late as 11:00 p.m.
