Lucille’s Laval est à la recherche de personnes passionnées pour se joindre à sa brigade en cuisine! Plusieurs opportunités sont actuellement disponibles : Chef de Cuisine, Sous Chef, Garde-Manger, Plonguer(se) et Cuisinier(ère) de ligne spécialisé(e) en fruits de mer.

Responsabilités

Chef de Cuisine:

Créer et mettre à jour les menus en collaboration avec l'équipe culinaire
Superviser le personnel de cuisine, y compris les chefs, les sous-chefs et les autres employés de cuisine
Superviser la préparation, la cuisson et la présentation des repas afin d'assurer une qualité constante
Gérer les stocks alimentaires et coordonner les commandes selon les besoins
Surveiller les coûts alimentaires et assurer le respect des directives budgétaires
Préparer des rapports sur les activités de la cuisine, notamment les performances, les coûts et les normes de qualité
Gérer les questions relatives au personnel et participer au processus de recrutement
Contribuer aux différentes tâches nécessaires au bon déroulement des opérations

Sous chef:

Gérer votre poste pendant la préparation et le service
Préparer et dresser les plats selon nos normes
Aider à la formation et au soutien des cuisiniers de ligne
Garantir la qualité, la constance et la présentation des plats
Veiller au respect des normes d'hygiène et de sécurité alimentaire
Aider à la préparation des listes et à l'organisation

Garde-Manger :

Préparer et dresser les entrées, salades et plats du garde-manger selon les standards de présentation du restaurant
Maintenir une organisation rigoureuse de la station pour assurer rapidité et constance en service
Collaborer avec l’équipe de cuisine pour assurer une exécution fluide pendant les périodes de fort volume

Plongeur(se):

Assurer le respect des procédures, politiques et standards.
Appliquer les règles d'hygiène et sanitaires.

Cuisinier(ère) de ligne (fruits de mer) :

Ouvrir et préparer les huîtres et autres fruits de mer avec précision, rapidité et constance selon les standards du restaurant
Préparer et assembler les items du menu liés au raw bar et aux fruits de mer
Maintenir un haut niveau de qualité, de fraîcheur et de présentation des produits servis crus

Exigences :

2 ans d'expériences dans un restaurant ou un environnement similaire à haut volume
Disponible à temps plein 5 jours semaine (minimum 40h)
Esprit d'équipe et bonne attitude
Fiable et ponctuel
Connaissances en matière de sécurité alimentaire (un atout)
La connaissance de l'anglais est un atout afin de faciliter la communication avec certains membres de l'équipe
Autorisé à travailler au Canada

Lucille’s Laval is looking for passionate individuals to join its kitchen team! Several positions are currently available: Head chef, Sous chef, Garde Manger, dishwasher and Line Cook specializing in seafood.

Responsabilities

Head chef: Salary $75K/year

Create and update menus in collaboration with the culinary team
Supervise kitchen staff, including chefs, sous chefs, and others kitchen workers
Oversee the preparation, cooking, and presentation of meals to ensure consistent quality
Manage food inventory and coordinate orders as needed
Monitor food costs and ensure compliance with budget guidelines in the kitchen
Prepare reports on kitchen activities, including performance, costs, and quality standards
Handle staffing issues and participate in hiring process
Contribute to various tasks necessary for the smooth running of operations

Sous Chef:

Manage your station during prep and service
Prepare and plate dishes to our standards
Assist with training and supporting line cooks
Ensure food quality, consistency and presentation
Maintain cleanliness and food safety standards
Help with prep lists and organization

Garde Manger :

Prepare and plate appetizers, salads, and pantry dishes according to the restaurant’s presentation standards
Maintain strict organization of the station to ensure speed and consistency during service
Collaborate with the kitchen team to ensure smooth operations during peak periods

Dishwasher:

Ensure compliance with procedures, policies and standards.
Apply hygiene and sanitary rules.

Line Cook (Seafood) :

Open and prepare oysters and other seafood with precision, speed, and consistency according to restaurant standards
Prepare and assemble menu items related to the raw bar and seafood
Maintain a high level of quality, freshness, and presentation for raw dishes

Requirements :

2 years of experience in a restaurant or similar high-volume environment
Available full-time 5 days a week (minimum 40 hours)
Team player with a good attitude
Reliable and punctual
Food safety knowledge (an asset)
Knowledge of English is an asset to facilitate communication with certain members of the team
Authorized to work in Canada
