Grillado’s is a casual dining restaurant that focuses on grilling the very best Portuguese chicken with a South African twist. That twist is our variety of world-famous peri-peri sauces. Located in the heart of Montreal, Mississauga, Milton, and Cambridge, it has quickly become known for its fun and engaging atmosphere, as well as its multitude of flavors that keep customers happy and coming back for more.

As a griller, your role is centered on precision, timing, and a deep understanding of heat. You aren't just flipping burgers; you are responsible for managing the most intense station in the kitchen, ensuring that proteins are cooked to exact specifications while maintaining high standards of food safety and quality.

As a prep cook, you will be washing, cutting, and preparing food and ingredients for cooking. You will also prepare all of the kitchen tools necessary for cooking and cleaning, wash dishes, clear up messes, organize the storage areas and shelves in the kitchen, and respond to the needs of chefs and other cooking staff. Additionally, you will ensure that the food is properly stored and safely handled for consumption. A good prep cook is an essential part of the kitchen staff, especially as an aide to a chef, as they help maximize the workflow in the kitchen.

Duties and Responsibilities

Key Responsibilities

Heat Management & Cooking: Operating commercial grills (charbroilers, flat-tops, and fryers) to sear, char, and cook meats, poultry, and vegetables to the desired temperature.
Station Setup : Organizing the grill station with necessary oils, seasonings, utensils, and prepped proteins before service begins.
Quality Control: Inspecting every piece of food for freshness before it hits the grill and ensuring it meets visual and taste standards before it leaves the window.
Temperature Precision: Using meat thermometers or the "touch method" to ensure proteins reach safe internal temperatures and specific customer requests (e.g., rare vs. medium-well).
Timing & Coordination: Syncing with the Fry Cook, Sauté Cook, and Expo to ensure all components of a table's order are finished at the exact same time.
Sanitation & Safety: Maintaining a clean workspace, preventing cross-contamination (especially between raw and cooked products), and performing deep cleans of the grill grates and surroundings.

Keeping the kitchen clean and orderly
Ensuring all ingredients are in stock for the Chef to complete their menu
Washing cutlery and dishes
Seasoning and preparing the necessary ingredients for cooking
Preparing some dishes such as salads or other less complex menu items
Setting out all the Chef’s ingredients before each shift and refill as necessary

Skills and Qualifications

Ability to work under pressure
Excellent verbal communication skills
Strong organizational skills
In-depth knowledge of kitchen health and safety requirements
In-depth knowledge of safe food storage guidelines
Ability to use kitchen utensils safely
Ability to take direction and work as a team player
