AM and PM Chef (including week end)

Hotel Le Cantlie suites is located in the heart of Montreal’s prestigious business and shopping district. The property has over 250 rooms and is a four-star, full-service boutique hotel.

Job Description

The Evening Chef oversees and participates in the kitchen operations to satisfy the needs and expectations of the guests and to ensure the efficiency and the profitability of the service.

Tasks
· Assists to develop and implement creative menu items.

· Supervises and participates in the preparation and cooking of various food items.

· Responsible for the maintenance of all recipes and their costs.

· Participates in yearly review of banquet and dining room menus.

· Establishes, applies, and enforces kitchen & company policies and procedures.

· Monitors food production, ordering, cost quality and consistency.

· Ensures proper safety and sanitation of all kitchen facilities and equipment; ensures the respect of MAPAQ hygiene requirements.

Skills & Requirements
· Efficiency, speed, and quality of execution.

· Sense of organization and resourcefulness, attention to detail.

· Excellent communication skills

· Verbal and written skills in both French and English

· Knowledge of inventory controls and food / labor cost

· Must be flexible to workdays and weekends as required by the operation.

Education and training
· Minimum 3 years of experience in a similar position.

· Diploma from an accredited cooking school, hotel management or related field.

· MAPAQ certification

Sommaire de l’emploi

Le Chef Petit-Déjeuner supervise et participe activement aux opérations de la cuisine afin de satisfaire les besoins et les attentes de nos clients et d’assurer l’efficacité et la rentabilité.

Tâches

Assister afin de développer et mettre en place le menu.
Superviser et participer à la préparation et à la cuisson des aliments.
Responsable du maintien des recettes et des coûts.
Participer à la révision annuelle du département des banquets et de la salle à manger.
Établir, appliquer et faire un suivi des politiques et procédures de la compagnie au sein de la cuisine.
Assurer le suivi de production, effectuer des commandes, s’assurer de la qualité et des coûts.
Maintenir un environnement sécuritaire, désinfection et nettoyage de la cuisine et de son équipement ainsi que respecter les normes d’hygiène du MAPAQ.

Compétences et Exigences

Efficacité, bonne vitesse et bonne qualité d’exécution.
Sens de l’organisation avec une attention aux détails.
Excellente capacité à communiquer.
Bon français/anglais écrit et parlé.
Connaissance du contrôle d’inventaire et du coût des aliments/de main- d’œuvre.
Doit être disponible à travailler de jour et fin de semaine selon les demandes.

Éducation et Formation

Minimum de 3 années d’expérience dans un poste similaire.
Diplôme d’une école de cuisine, de gestion hotellière ou autre secteur pertinent.
Certification MAPAQ
