Position Overview
Kelseys Original Roadhouse Vaughan is seeking an experienced, organized, and hands-on Bar Manager to oversee all aspects of our bar operations.
The Bar Manager is responsible for beverage inventory, ordering, cost controls, bartender development, drink quality, guest experience, cleanliness, and compliance with Kelseys standards.
This position requires someone who takes complete ownership of the bar and ensures that all bar systems remain operational, properly maintained, and consistently followed. The successful candidate must be comfortable leading from behind the bar, coaching the team, managing costs, and maintaining a fun but professional atmosphere.
Key ResponsibilitiesBar Inventory and Ordering
- Complete accurate weekly beer, liquor, wine, and beverage inventories.
- Prepare and place bar orders based on sales volume, upcoming promotions, and inventory levels.
- Maintain appropriate stock levels without over-ordering.
- Receive deliveries and verify product quantities, pricing, and accuracy.
- Organize all liquor, beer, wine, coolers, mixes, garnishes, and bar supplies.
- Maintain proper product rotation using first-in, first-out procedures.
- Investigate inventory shortages, overages, transfers, spills, and unexplained variances.
- Monitor high-cost products and ensure all alcohol is properly secured.
- Maintain accurate invoices, inventory records, order guides, and transfer documentation.
- Work with suppliers and representatives to resolve shortages, delivery issues, and product-quality concerns.
Beverage Cost Controls
- Monitor beverage cost, sales mix, waste, discounts, voids, spills, and promotional giveaways.
- Ensure all drinks are properly measured, portioned, and entered into the POS system.
- Enforce Kelseys recipes, glassware, garnishes, presentation, and pouring specifications.
- Prevent over-pouring, unrecorded drinks, product loss, and unauthorized consumption.
- Review bar sales and identify opportunities to improve beverage revenue and profitability.
- Maintain accurate spill and waste records.
- Conduct regular spot counts and inventory audits.
- Develop action plans when beverage costs or inventory variances exceed acceptable targets.
Bar Operations and Systems
- Ensure all opening, closing, cleaning, stocking, and shift-change checklists are completed.
- Maintain bartender prep lists and par levels for each shift.
- Ensure the bar is fully stocked and prepared before every service period.
- Maintain proper labelling, dating, storage, and rotation of juices, garnishes, syrups, and other prepared products.
- Ensure draught beer lines, taps, liquor guns, glasswashers, coolers, ice machines, and bar equipment are clean and functioning properly.
- Report equipment problems immediately and coordinate repairs when required.
- Maintain organized beer coolers, liquor storage areas, service wells, and glassware stations.
- Ensure bar menus, pricing, POS buttons, and promotional materials are accurate and current.
- Implement new beverage menus, seasonal promotions, and Head Office initiatives.
- Maintain a clean, safe, organized, and inspection-ready bar at all times.
Team Leadership and Training
- Recruit, train, coach, schedule, and develop bartenders.
- Lead by example and actively support the bar during busy service periods.
- Train bartenders on recipes, responsible alcohol service, product knowledge, suggestive selling, and guest engagement.
- Ensure bartenders complete all required Krew Licensing and online training programs.
- Conduct regular beverage knowledge and recipe testing.
- Hold bartenders accountable for attendance, appearance, cleanliness, service standards, and side duties.
- Provide ongoing feedback, performance coaching, recognition, and corrective action when necessary.
- Promote teamwork between bartenders, servers, hosts, kitchen employees, and managers.
- Build a positive, energetic, professional, and performance-driven bar culture.
Sales and Guest Experience
- Create a lively and welcoming atmosphere for bar and dining-room guests.
- Deliver fast, friendly, and accurate service while maintaining drink quality.
- Train the team to make confident beverage recommendations and use responsible suggestive-selling techniques.
- Review Average Guest Cheque and Kicked Up reports to identify sales opportunities.
- Increase beverage sales through product knowledge, promotions, and genuine guest engagement.
- Build relationships with regular guests and encourage repeat visits.
- Monitor guest feedback and address concerns professionally.
- Support sports events, promotional nights, patio service, and other restaurant activations.
- Work with restaurant leadership to develop strategies that increase bar traffic and beverage sales.
Compliance and Safety
- Ensure responsible alcohol service and compliance with Smart Serve and Ontario liquor laws.
- Monitor guests for signs of intoxication and take appropriate action when required.
- Ensure identification is checked according to legal and company requirements.
- Maintain accurate alcohol-service and incident documentation.
- Ensure employees follow cash-handling, tip, discount, void, and payment procedures.
- Maintain compliance with food-safety, workplace-safety, and sanitation standards.
- Ensure liquor storage areas remain locked, controlled, and accessible only to authorized employees.
- Maintain a safe environment for guests and employees.
Management Responsibilities
- Work closely with the General Manager and management team to achieve restaurant goals.
- Participate in manager meetings and provide updates on bar sales, inventory, staffing, and operating concerns.
- Assist with restaurant opening, closing, and Manager-on-Duty responsibilities.
- Support dining-room operations when required.
- Complete assigned reports, checklists, and administrative responsibilities accurately and on time.
- Communicate product shortages, staffing concerns, equipment problems, and cost issues promptly.
- Take ownership of the bar’s operational and financial performance.
Qualifications
- Previous bar-management or senior bartending experience is required.
- Experience in a high-volume, full-service restaurant is strongly preferred.
- Strong knowledge of beer, wine, spirits, cocktails, and responsible alcohol service.
- Experience completing liquor inventory and placing beverage orders.
- Understanding of beverage costs, inventory variance, portion control, and loss prevention.
- Strong leadership, communication, organization, and coaching skills.
- Ability to remain calm and effective in a fast-paced environment.
- Strong attention to detail and consistent follow-through.
- Experience with POS systems, scheduling, inventory tools, and restaurant reporting.
- Valid Smart Serve certification is required.
- Valid food-handler certification is preferred.
- Flexible availability, including evenings, weekends, holidays, and late-night shifts.
