Junior Sous Chef / Sous Chef

Location: Olly Fresco's – Royal Bank Plaza, Toronto
Job Type: Full-time, Permanent
Schedule: Monday–Friday | Early Day Shifts Only
Pay: Starting at $21.50/hour, with potential up to $24.50/hour based on experience and position level

About Us

Olly Fresco's is a dynamic, fast-paced food service operation focused on providing fresh, high-quality meals to our customers. Our Royal Bank Plaza location also supports food production and distribution to other locations.

As our operation continues to grow, we are looking to add a new Junior Sous Chef / Sous Chef position to our culinary team. This is a newly created role, not a replacement for an existing vacancy, and we are focused on finding the right person who can grow with our team.

Unlike many traditional restaurant kitchen positions, this role offers:

Monday to Friday early day shifts only
No evenings
No weekends
No regular overtime

Potential apprenticeship and mentorship opportunity working alongside a Red Seal Chef with over 20 years of industry experience

For the Junior Sous Chef level, we especially welcome experienced Line Cooks or other rising culinary talent who are ready to take the next step in their cooking career, develop leadership skills and take on more responsibility.

More experienced candidates may be considered directly for the Sous Chef level.

Position Overview

We are seeking a passionate, organized and dependable Junior Sous Chef / Sous Chef to join our culinary team and help drive executional excellence throughout our kitchen.

The successful candidate will combine hands-on culinary skills with organization, leadership and problem-solving abilities. Depending on experience, the position will involve supporting or leading daily kitchen operations, food production, menu execution and team development.

Key Responsibilities

Assist with the development and management of weekly menus in alignment with brand standards
Coordinate and ensure the distribution of daily hot food production to other locations
Ensure culinary production aligns with Olly Fresco's Executional Framework
Maintain high culinary standards and proper techniques for food production, presentation and service
Support, lead and develop members of the culinary team to ensure quality and consistency
Coach and mentor employees while establishing clear expectations and best practices
Maintain the integrity of the standard Olly Fresco's food offering while ensuring food quality and safety
Support Operational Excellence fundamentals, including waste management, recipe and menu compliance, and labour efficiency
Ensure proper operation and routine care of kitchen equipment
Maintain a clean, organized and safe kitchen environment
Follow all company policies, food safety requirements, health and safety regulations, and applicable labour guidelines

Qualifications

Previous professional culinary experience required
Strong Line Cooks looking to advance into their first Junior Sous Chef position are encouraged to apply
Previous leadership or supervisory experience is an asset for Junior Sous Chef candidates and preferred for Sous Chef candidates
Culinary education or equivalent hands-on industry experience
Strong understanding of culinary techniques, food safety and kitchen operations
Strong organizational, multitasking and communication skills
Ability to work effectively in a fast-paced, high-volume environment
Experience with catering or high-volume food production is an asset
Positive attitude, strong work ethic and willingness to learn and grow
Ability to lead by example and contribute to a positive and productive kitchen environment

Compensation

Starting at $21.50/hour, with the potential to earn up to $24.50/hour, depending on culinary experience, leadership experience and whether the successful candidate is hired at the Junior Sous Chef or Sous Chef level.
