Full job description

The Senior Bread Baker is a skilled artisan responsible for leading daily bread production, maintaining the highest standards of quality and consistency, and supporting the development of junior bakers. This role requires deep expertise in naturally leavened breads, fermentation management, dough handling, and production planning in a high-volume artisan bakery environment.

The ideal candidate is a hands-on leader who thrives in a fast-paced production setting, demonstrates strong technical baking skills, and is committed to continuous improvement.

Key Responsibilities

Produce artisan breads according to established formulas and production schedules.
Mix, scale, divide, shape, proof, score, and bake a variety of naturally leavened and yeasted breads.
Monitor and manage fermentation to ensure product consistency and quality.
Maintain sourdough starters and levains.
Adjust doughs and fermentation schedules based on environmental conditions and production needs.
Perform quality checks throughout the production process.
Operate bakery equipment safely and efficiently, including mixers, proofers, retarders, and deck ovens.
Maintain a clean, organized, and food-safe work environment.
Assist with ingredient preparation, inventory rotation, and minimizing production waste.

Qualifications

Able to work Evenings between 2pm-11pm.
Minimum 5 years of professional bread baking experience.
Strong experience with naturally fermented and sourdough bread production.
Excellent understanding of fermentation, dough development, mixing, shaping, and baking techniques.
Experience working in a high-volume artisan bakery environment.
Ability to work overnight, early morning, weekends, and holidays as required.
Ability to lift up to 25 kg (55 lbs) and stand for extended periods.
Strong attention to detail and commitment to quality.

Preferred Qualifications

Experience with Italian-style breads and long-fermentation processes.
Formal baking or culinary training.
Experience working with deck ovens and large-scale production equipment.
